This is a really simple cookie to make and you don't even have to bake these. I call them chocolate peanut butter oatmeal cookies.
Ingredients: 1 stick margarine, 3Tbls cocoa, 1/2 cup milk, 3 cups sugar, 1 1/2 tsp vanilla, 3/4 cup peanut butter and 3 cups quick cooking oats. Melt margarine and stir in cocoa till well blended with no lumps. Add milk and sugar. Stir and keep on stirring. When mixture starts to come to a full boil, then boil for 1 minute. Still stirring. Remove from heat. Add vanilla and stir. Add peanut butter and stir. Then add the oats about a cup at a time. Stirring after each cup. When all the oats are stirred in, drop by spoonfulls onto waxed paper. Usually by the time I have gotten all of the mixture onto the waxed paper, the ones that I dropped first are set and ready to eat! Enjoy!
PS......I find it easier to measure out the peanut butter and oatmeal ahead of time. After the mixture has boiled, you don't want to waste time doing that.

I have a pretty good recipe for Oatmeal cookies: 1-1/2 c.all-purpose flour; 1 c. (2 sticks) softened butter or margarine; 1 c. firmly packed brown sugar; 1/2 c. granulated sugar; 2 eggs; 1 tsp. baking soda; 1 tsp. cinnamon; 1/2 tsp. salt; 3 c. old fashioned oatmeal (uncooked) ; 1 c. raisins; 1 tsp. vanilla extract. Heat oven to 350 deg.; beat together margarine and sugars until creamy; add eggs & vanilla and beat well. Add combined flour, baking soda, cinnamon & salt; mix well. Stir in oats and raisins; mix well. Drop by rounded tablespoons onto ungreased cookie sheet; bake 10-12 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack. This makes about 4 dozen cookies. Good Luck!

this is actually a recipe i came accross by accident but it tasted great and the cookies were still moist the next day
wendys sugar cookie
2 c. flour
2 c. sugar
1 crisco butter flavor shortning stick cold (not soft)
2 tsp. vanilla
1 egg
1 tsp. baking soda
as best you can cream together crisco vanilla sugar egg and baking soda. slowly add the flour. when you look at the cookie mix it looks sort of crumby but if you take a hand full of crumb its squishy and you can squish it into a patti bake at 375 until done

Almond-Toffee Chocolate Chip Cookies:
Prep: 30 min., Bake: 14 min. per batch
3/4 cup butter, softened
3/4 cup granulated sugar
3/4 cup firmly packed dark brown sugar
2 large eggs
1 1/2 teaspoons vanilla extract
2 1/4 cups plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1 cup semisweet chocolate morsels
1 cup almond toffee bits
1/2 cup slivered toasted almonds
Beat butter and sugars at medium speed with an electric mixer until creamy. Add eggs and vanilla, beating until blended.
Combine flour, soda, and salt in a small bowl; gradually add to butter mixture, beating well. Stir in morsels, toffee bits, and almonds. Drop by tablespoonfuls onto lightly greased baking sheets.
Bake at 350° for 8 to 14 minutes or until desired degree of doneness. Remove to wire racks to cool completely.
Yield: Makes about 5 dozen
