Zucchini Chocolate Orange Cake
"Very moist and different."
INGREDIENTS :
2 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
2 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon round cinnamon
3/4 cup butter
2 cups white sugar
3 eggs, beaten
2 teaspoons vanilla extract
1/2 cup orange juice ( or milk )
3 cups grated zucchini
1 tablespoon orange zest
1 cup chopped walnuts
1 1/4 cups confectioners' sugar
1/4 cup orange juice
1 teaspoon vanilla extract
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour Bundt pan.
In a medium bowl, sift flour, cocoa, baking powder, baking soda, salt and cinnamon. Set aside.
In a large bowl, cream butter and sugar until fluffy. Add eggs, 1 teaspoon vanilla and orange juice to the butter mixture. Stir in dry ingredients and mix until well blended. Fold in zucchini, orange zest and nuts.
Pour into a greased and floured Bundt cake pan. Bake at 350 degrees F (175 degrees C) for 50 minutes, or until a toothpick inserted into center of cake comes out clean. Allow to cool, then drizzle with glaze.
To make the glaze: In a small bowl mix together sugar, orange juice and vanilla. Invert cake onto serving dish, then pour glaze over.

Rich Fruit Cake
Ingredients
Butter 180 gms
Sugar 230 gms
Baking Powder 1/2 Tsp
Mixed Fruit (TuttiFruti-available during christmas in stores) 150 gms
Milk 30 ml
Self Rising Flour or All Purpose Flour 230 gms
Eggs 4
Vanilla Essence 1/2 Tsp
Almonds 50 gms
Method:
Blanch almonds and chop. Mix most part of fruit with almonds.
Beat eggs with vanilla essence and set aside.
Cream butter and sugar and add the beaten eggs gradually.
Fold in half the flour and fruit mixture into creamed mixture, mix throughly. Fold in the remaining flour and fruits. Add milk to get a dropping consistency.
Grease and flour a 8 inch baking tray and pour in the cake mixture. You can jab the remaining fruit and chopped almonds on top.
Bake at 350 degree F for about 40 mins. After that, put off the oven and leave it inside for approx 10 mins.
Remove from oven and place it on a wire rack to cool.

EASY CARROT CAKE
1 (2 layer) yellow cake mix
1 1/4 c. Miracle Whip salad dressing
4 eggs
1/4 c. cold water
2 tsp. cinnamon
2 c. finely shredded carrots
1/2 c. chopped walnuts
1 (16 oz.) tub vanilla ready-to-spread frosting
Combine cake mix, salad dressing, eggs, water and cinnamon, mixing at medium speed on electric mixer until well blended. Stir in carrots and walnuts. Pour into greased 9x13 inch baking pan. Bake at 350 degrees for 35 minutes or until wooden pick inserted in center comes out clean. Cool, spread with frosting.

1 (20 ounce) can crushed pineapple, drained
1/2 cup sweetened flaked coconut
1 cup chopped walnuts
1 cup raisins

Preheat the oven to 350 degrees F (175 degrees C). Coat a 10x15x2 inch baking dish or 10 inch Bundt pan with cooking spray.
In a medium bowl, stir together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside. In a separate larger bowl, mix together the eggs, sugar and vanilla by hand. Stir in the oil; the mixture should resemble pudding. Gradually stir in the dry ingredients, then fold in the carrots, pineapple coconut, walnuts and raisins. Pour the batter into the prepared pan, and spread evenly.
Bake for 55 to 60 minutes in the preheated oven, or until a small knife inserted into the cake comes out clean.

Here's a super easy cake that i light and soft.
Start with a box of orange cake mix, package of vanilla jello pudding.
Mix cake as directed but swap oil out for equal amounts of apple sauce. Add dry vanilla pudding.
Use two round cake pans to bake. Bake as directed.
For the icing. Take a regular size container or cool whip, plain or vanilla either is great, add a regular size can of drained crushed pineapples.
Ice the cake with the cool whip/pineapple mixture.
Keep in the fridge.

INGREDIENTS:
3/4 cup candied orange peel
1/2 cup coarsely chopped walnuts
1/2 cup raisins
1/2 cup golden raisins
2 tablespoons all-purpose flour
1/2 cup butter, softened
1/2 cup white sugar
2 1/2 tablespoons honey
2 eggs
1 1/2 tablespoons light cream
2 tablespoons dark rum
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder

DIRECTIONS:
Toss the candied orange peel, walnuts, and raisins with 2 tablespoons flour. Set aside.
In a large bowl, cream the butter with the sugar and honey. Beat in the egg, then the cream or milk, rum, and vanilla. Stir together the remaining 1 1/2 cups flour and the baking powder; beat into the creamed mixture. Stir in the fruits and nuts. Turn the batter into a greased and floured 9 x 5 inch loaf pan.
Bake in a preheated 350 degrees F (175 degrees C) oven for 10 minutes. Lower the heat to 325 degrees F (165 degrees C). Bake the cake 45 minutes longer, or until it tests done with a toothpick. Transfer to a rack to cool.

Try this ecipe, it my all time favorite, and it is extremely simple to make...
SIMPLE BANANA NUT CAKE
1 box white cake mix
1/3 cup oil
1 1/2 cup milk
3 eggs
1 box banana cream pudding mix
1 cup chopped pecans
Mix all ingredients together. Pour into a greased 13 x 9 inch cake pan. Cook at 350°F for 32 to 36 minutes.
Tastes like banana nut bread. If you want icing, Pillsbury cream cheese icing makes for a good combination.
Try using different kinds of pudding mixes. My husband loves pistachio.

mix all add some dry fruits and bake it.
