Has anybody got a recipe please?

Make a rather dry dhal. Wait til the mixture cools, roll into balls or sausage forms and fry gently.

as croquettes are potato based, the best thing to do is make some mash & soften your lentils, then mix together and allow to cool a bit so you can handle the mixture, then shape into sausage shapes. Allow to stand for a few mins...then roll in plain flour and then dip each one in egg or milk (soya fine if you a strict veggie) then dip in breadcrumbs until fully coated..place in fridge for approx 1 hour so they set, then deep fry on 180 degrees...they mush be cooked fast as they will break down otherwise. after you have got them crispy and golden, place in oven for a few mins on medium heat so the inside is definately hot....I know this seems a lot of trouble BUT I am sure you will be pleased with the results

Try this yummy felafel-type snack
Cook 100g lentils in salted water for about 15 mins until doubled in size but not too soft. Whilst doing this, finely chop a small onion & garlic (optional) soften in some oil in a frying pan. Mix with lentils & allow to cool. If you want a fine texture, whizz mixture in a food processor. Blitz 2 slices wholemeal bread to make breadcrumbs & add to lentils with one beaten egg or 1-2 tablespoons natural yoghurt, chopped corainder, ground cumin & chilli powder.
taste & season if necessary. If too stiff, add some lemon juice or yoghurt. If too wet add more breadcrumbs.
Shape into balls (refrigerate them if you have time so they hold their shape better), then shallow fry or oven bake for about 10-15 mins. Lovely with pitta bread, yoghurt & salad with fresh lemon squeezed over them. Also easy to make with tinned chick peas
