Excellent question. I would like to know myself.
I would recommend, both non-religious, the "Mother Earth News" and the "Sierra Club" newletter.
You should probably try Edward Abbey's "Desert Solitaire" as well!

why not ask your bride? she ought to know what he likes to read. and who says he'll want a focus on his religion....maybe a golf, men's health, or a playboy (jk) might look better on your coffee table to him! or try asking him, he might be impressed or appreciate you are taking an interest in his faith, and it's a great opportunity for you to learn somthing from him.
