"Foil is shiny on only one side because as it passes through the final foil mill, two thicknesses of foil are rolled together. The sides facing each other emerge with the dull finish, while the sides in contact with the foil mills come out shinier – due to the burnishing effect of the rollers."
I read an article years ago that told of some people who conducted some studies to investigate the old thought about baking with the shinier side toward the food. The studies indicated that the side turned toward the food makes no difference in the cooking. Even after hearing that, my wife said she'd still bake with the shiny side in. Old habits....

That is so people who are being monitored by spaceships can block these signals by wrapping their head with foil. The shiny side out is the only safe way; the aliens' waves are reflected back to the ship. "Shiny side in" can cause the wearer's own brain waves to be reflected back inside the brain and cause a meltdown.
Seriously, cooks have caught on to this and can do the shiny side in to cook food better.

the shiny side is a by product of the manafucturing process, it rools through a machine and one side ends up shiny while the other stays a dull unpolished color .......it has nothing to do with how you use the foil .........

i saw this on the discovery channel once. It has no real significance, it's just when they are rolled once side stays shiny and the other dull. It has to do with the machine that is rolling it out.

it makes no distinction in any respect. the clarification for the two factors its the way they manufacture it. the way they turn the super thick aluminum into super skinny takes alot of tension and because you could turn over a 1000 foot roll of aluminum one area is going to have a various end via super rollers used to press it.

it has to do with cooking temperatures. the shiny side deflects heat and the dull side doesn't deflect it as much...i'm not real great on explaining it...
does this help?
