would like a recipe that is healthful, low fat and low acid (if possible). looking for something that would go great with dinner salad. can be with meat or meatless; just tell me what meat would be good.

You could make Lentils and rice. It's very healthy. It would go very good with a dinner salad. It is meatless, but it also can go good served with either, beef, or chicken. It's my all time favorite.

This still is kinda have fat but is healthy, I make mac n cheese (is fully cooked when I add tuna), then I put a half a can of tuna in it (tuna is 0 fat and all protein with 0 carbs) then I let it melt in and I boil some canned corn or fresh vegies either way but not both at the same time, then add that full can of either corn or mixed veggies.
Mix it up drain, ohhh mac-suprise, my kids love it and is pretty healthy.
Another one is a tuna melt sandwich, use low fat cheese, and 100% white albecore tuna.
Buy a womens fitness or muscle and fitness, or actually any fitness magazine and they have loads of meals that are great and stuff. Alot of times they use food you'd be suprised at how they make it to turn so yummy.

BBQ Chuck Roast

INGREDIENTS:
1 (5 pound) chuck roast
1 cup barbeque sauce
1 cup teriyaki sauce
1 (12 fluid ounce) can or bottle beer
3 teaspoons minced garlic
3 teaspoons thinly sliced fresh ginger root
1 onion, finely chopped
3 teaspoons coarsely ground black pepper
2 teaspoons salt

DIRECTIONS:
In a large bowl, mix barbeque sauce, teriyaki sauce, beer, garlic, ginger, onion, black pepper, and salt. Place the roast into the marinade, cover and refrigerate for six hours, turning often.
Preheat an outdoor grill for indirect heat. Remove the roast from the marinade, and pour the marinade into a saucepan. Bring to a boil, and cook for 5 minutes. Set aside for use as a basting sauce.
Thread the roast onto a rotating barbecue spit above indirect heat. Cook the roast for two hours, or until the internal temperature of the roast is at least 145 degrees F (63 degrees C). Baste often during the last hour with reserved marinade.


Side-dish suggestion:

Barbecued garlic baked potatoes: Poke hole in raw potatoes and place them on grill, basting occasionally with a mixture of melted butter, chicken stock, and minced garlic.

I'd go with chicken breast fettacine....you can even buy a box of the fettacine or alfredo (pasta)...where they sell macaroni & cheese in a box or rice a roni....If u want it low fat...braise the chick. breasts in chick. bouillion in a pan (covered)....when cooked...make the fettacine by the box directions...then mix in the chicken when it is done...I make that with a salad...it's easy, low fat, & yummy. Brocolli goes well with it.

Honey Mustard Chicken
I figure 2 per person

As many boneless skinless chicken breasts as you need
lay them out in baking pan
pour a little honey over each one
squeeze mustard over the honey
cover pan with aluminum foil and bake for 30-40 min. at 350 F. degrees.

Rice would go good with the meal. White or brown, your choice topped with butter....not gravy. Or sprinkle a little brown sugar on it.

It's quick, easy and delicious!

my favorite is medium rare beef tenderloin(filet mignon) always perfect with salad.
