MISSISSIPPI MUD CAKE
2 c. sugar
2 c. flour
2 sticks butter
4 tbsp. cocoa
1 c. water
1/2 c. buttermilk
2 eggs
1 tsp. cinnamon
1 tsp. vanilla
FROSTING:
1 stick butter
4 tbsp. cocoa
6 tbsp. milk
1 box confectioners' sugar
1 tsp. vanilla
1 c. chopped nuts
CAKE: Mix together in large bowl 2 cups sugar, 2 cups flour. Mix and bring to boil 2 sticks butter, 4 tablespoons cocoa and 1 cup water. Pour over flour mixture; mix well and add 1/2 cup buttermilk, 2 beaten eggs, 1 teaspoon cinnamon and 1 teaspoon vanilla. Mix well. Pour into 16 x 11 inch pan.
FROSTING: Mix and bring to boil 1 stick butter, 4 tablespoons cocoa and 6 tablespoons milk. Remove from heat and add 1 box confectioners' sugar, 1 teaspoon vanilla and 1 cup chopped nuts. Beat well and spread on hot cake.
CAKE: Begin frosting 10 minutes before cake is done. Bake cake at 350 degrees for 25 minutes. Bake cake in 16 x 11 inch pan.

Mississippi Mud cake
1 cake mix
2 sticks melted margarine
4 eggs
2 cups sugar
1 1/2 cups plain flour
1 cup chopped nuts
1 tsp. vanilla
1/3 cup cocoa
1 cup coconut
Frosting
1 pint marshmallow cream
1 stick margarine
1/2 cup evaporated milk
1 lb. tenx sugar or extra fine powdered sugar
1/3 cup cocoa
1 tsp. vanilla
1 cup chopped nuts
Cream together sugar and butter. Add eggs, and mix. Add flour, nuts, vanilla, cocoa, and coconut, and stir. Grease a 9x13 baking dish, add cake batter. Cook for 30 mins at 350 degrees.
Spread marshmallow cream on top, let cool. While cooling, mix margarine, evaporated milk, sugar, cocoa, vanilla, and nuts. Mix together, when cake cools, frosten.

Louisiana Mud Pie
1/2 cup caramel topping
1 tablespoon bourbon
1 (9-inch) chocolate wafer pie crust
2 pints coffee ice cream, softened
1/2 cup chocolate chips, divided
1/2 cup pecans, finely chopped
In a small saucepan over medium heat, add caramel topping and bourbon. Bring to a low boil, reduce heat to low and simmer for 8 to 10 minutes. Remove from heat and set aside to cool.
To pie crust add 1/4 cup of cooled caramel sauce. Place in freezer for 15 minutes until caramel firms.
Remove pie crust from freezer; add 1 pint softened coffee ice cream. Over top of ice cream, sprinkle 1/4 cup chocolate chips and 1/4 cup pecans. Return pie to freezer for 45 minutes to 1 hour. Repeat and make another layer. Return pie to freezer for a minimum of 4 hours.

Your bag of powdered sugar is usually 2 pounds. The box is usually 1 pound. I have never gone wrong when I have used half of a bag when a recipe calls for a box.
