If you are refering to Chinese style thin egg noodles(like those used in wan tan noodles), but simple, easy to prepare.
1. Soak dried shitake mushrooms for 15 min at least, then slice thinly to strips. Pour away water. Cook soaked mushroom in leftover stock from step 2.
2. Cook in salted water : mince pork. Or cook chicken (breast / drumstick) then shred
3. Mix Sauce consisting of oyster sauce, dark soy sauce. sesamine oil. Chillie paste(ready mix plain or sambal chillie etc)
4. Boil noodles until just cooked, Remove and dump into cold/room temp water. Rewarm by quick dip in the boiling water then remove.
5. mix all, and you are ready to eat.

i assume you will buy the noodles and then cook them, not make the noodles.
You can fry the noodles, boil or saute them.
Just boil them first, drain and run some oil thru to prevent sticking.
Later, fry meats like chicken, pork or even fish or shrimp in garlic and oil,fry veggies like chinese mustard greens or bean sprouts add sesame and oyster sauce, and take ingredients out, leaving the sauce behind.
Add the noodles and toss evenly.
Add the earlier ingredients and serve!!
You can top with finely julienned ommelette too!!

You boil them in lightly salted water to which you add about a quarter cup of cooking oil to keep them from sticking together. Boil until tender which is about 6 to 8 minutes. Serve with melted butter and salt and pepper to taste or, cover them with your favorite spaghetti sauce.
