Stuffing:
2 boiled Potatoes
1 small finely chopped Onion (optional)
Coriander leaves finely chopped
Small piece of Ginger (very finely chopped or grated)
1 or 2 green Chilies (finely chopped)
Salt Red Chili powder and Garam masala as per taste
Butter

Preparation of aaloo paratha :

For the cover make dough out of whole-wheat flour (atta), as you would do for any parantha/roti.
Mash the potatoes.
Add all the stuffing items to mashed potatoes and mix it properly.
Make two medium size chapati, add the filling to the one chapati and cover it with the second one.
Now roll it slightly. Put it in a pre-heated oven at 450-degree. Cover top oven grill with aluminum foil & Place Paratha over it for easy baking.
When top side is done change the side and keep a check (till properly baked)
Spread butter over it. Serve aloo paratha hot with yogurt (curd

Hi

If u need a pure punjabi homemade paratha, note down the recipe

For the stuffing
Potatoes - boiled and mashed - 4 nos.
Green chillies finely chopped - 2 -3 nos./red chilli powder - 2 tsps
coriander leaves - finely chopped - 1 small bunch
amchur powder - 3 tsps / pomogranate seeds powder - 3 tsps
salt to taste

For the outer covering
knead the wheat flour as you would for rotis.. the flour is should not be too hard or too soft.. For best results keep the kneaded dough in the fridge for 15-20 minutes.. before making paranthas.

Mix all the ingredients of the stuffing together in a bowl and knead gently.. Take a small portion of kneaded wheat flour or atta and roll out a small roti. stuff a small portion of the stuffing in the roti and gently roll out in a bigger roti giving a round look. Heat a nonstick tava and apply a little ghee and put the stuffed parantha on it. on a medium or slow flame roast the parantha with a nonstick spatula with ghee apllied on both sides. The parantha should look crisp light brown. Top it with a spoonful of homemade butter or amul butter ..

Bindu ...for making aloo parathas u have to get potatoes mashed nicely and then u have to oil a pan and then put in it chopped onions, turmeric powder a tea spoon, salt according to taste ..and chilly powder (dont add any other things as it will break when u roll chappatis) and then make stuffing or filling which u put in between chappatis which u prepare daily as usual then u can fill this stuffed potatoes inside and again roll some chappatis take less stuffing otherwise it will break down from sides...then heat them with desi ghee on tawa or if u can do in micro wave or oven ....and serve hot with chutney, curd or pickle (achar)

this a really easy and delicious way to prepare aloo paratha...
just make paratha the normal way...when u have rolled it out, add the mashed potato with a bit of salt and fold it up and roll it out again.....
then fry it in a non-stick pan with a bit of oil...
