More specifically, what does this probabilty tell me about the density or abundance of an organism if any?

Chi-square has lots of uses. It describes the distribution of sample variance values when those samples are drawn from a Normal (Gaussian) distribution. I don't know how, exactly it relates to the density of an organism.

does chi-square have to have to have a normal distribution? I though it was a non-parametric.

To answer the question. This type of hypothesis test determines the probability that the difference between the mean of the groups are due to chance. For instance a chi-square "cut-off" of .05 would estimate that the difference between the treatment group and the control group maintains only a 5 % chance of not being due to the treatment.

If I understand your problem; a section of forest has 15 deer per acre, another section has 22 deer per acre. Placing these numbers in the chi-square table will yield a result. If in the chi-square matrix of critical values shows that it is significant at a certain level (.001, .05, .1) then the difference is not due to chance.
