I lost the proof of insurance with my one vehicle on it, but have the stub from the other vehicle. The policy number is the same. Can I just send the other stub with my check to the county to get my window sticker or are they going to pitch a fit about it?

Ask your agent for a replacement "proof of insurance" card, that's what you pay him/her for. With some companies you can even get a card on-line.
I'd just be willing to bet that if you gave the Texas authorities an insurance card that didn't match the vehicle, they would probably consider that FRAUD.

It depends on the county tax assessor office. Some will accept the insurance policy with your name on it, others will require that the specific car (by VIN) be listed for the registration.

You will note that the law specifies that the insurance be shown for "that vehicle" (see link below). My rural county is sometimes a lot less rigid on things than a busy metropolitan county. Yours may or may not be.

Of course it has to match! Get a duplicate copy from your insurance company!
