What is outrageous? $20? $50? I use either Henckel Twins (not the singles - they are made in China and licensed by Henckel - not the same quality) for my home and I pay about $100 per knife - mind you I have had the same ones for over 15 years - not a bad investment. I also have some Sebatier knives at work that run me $100 - $200 per knife.
But at home I also have this neat little Wiltshire "chef style" knife, with its own little sharpener case, that ran at about $40 and is pretty good for everyday stuff in the average house holdkitchen.
It all depends what style of cooking you prefer, how often you cook from scratch, how serious you are about whether a tomato gets squished because the knife crapped out, and if you are going to go through the trouble to care for them properly. I use a large rectangular piece of flint and olive oil to sharpen my knives - do you want to do that?
Also, cheap knifes can be dangerous if the handle separates from the blade during chopping (that will never happen with a quality knife), or if they are dull.
More serious cuts happen from using a dull knife than a sharp one - the injuries are nasty. It may be because you are VERY cautious when using a truly honed knife.

try Walther knives hand made in Ohio and they are reasonable life time warranty and send knife back and they sharpen for free...he was a great wood carver their is a museum with all of his work...he started the knife company and it was carried on...look under Walther knives Dover Ohio...look under Walther museum ....i just looked and i have had my knives for 22 yrs and they are almost the same price now,,,,62 dollars for a 9 inch french and prices range down...look into this before you purchase somewhere else ...i know you will be satisfied...
