I made pancakes an hour ago for my 38 year old daughter. I did it when she was a kid, and she still enjoys my pancakes. I told her I was out of practice, and she volunteered to let me practice next Saturday as well, before we return to Mexico until Christmas.

Yes, you can make pancakes without eggs. Just add a tablespoon of oil for each egg you leave out. Unless you are a real gourmet, you might not even be able to tell the difference.

In fact, you can make pancakes or bread all kinds of ways. Add mashed potatoes. Add applesauce. Add pieces of nuts. Add strawberries.

If you can think it up, and it's edible, you can put it in a pancake.

Just get a pancake mix that you only have to add milk or water to.

I can't believe I know the answer to a cooking question, I haven't eaten anything that hasn't come out of the microwave for ten years. Yes you can, all you have to do is substitute buttermilk for milk. Geez I think I'm going to faint from the shock.

Yeah, but if you are making them from scratch they will be really heavy and dense. Not horrible, though. I would recommend a pre-made mix, or egg substitute, if possible.

Yeah, just use a mix like Bisquick or Jiffy. All you need is water.

I use 'Krusteaz' - it's wonderful! Everything is in it - just add water! I also add dried fruit & nuts & cinnamon & nutmeg.
