I don't know what you guys like but I think it would be romantic to go ice skating in the winter. Byrant or Central Park would be nice for that. You can also go to Times Square for the countdown and watch some good live performances. If you are museum people, go to museums, it's very intellect, classy, and intimate (in my opinion). You want to go places where you can connect and be as close to each other as you can, so I don't suggest movies or theaters where you just get to sit next to each other.
Have fun and I hope things work out well for you!

Go to a restaurant you've never been to, stay in a theme hotel for one night if they have them there.
When I visited New York in 2002 we saw the view from the Empire State building, and we took a helicopter ride around the island, since they won't fly over Manhattan any longer. We also so Ground Zero, took a horse/carriage ride through Central Park, saw Mamma Mia! and walked up and down Broadway and Times Square. I felt so energized while I was there. We ate at great restaurants - I wish I could remember the name of the one that's open all night and you cook the food you order right at a grill at the table, built right in! It was delicious, and fun.

Central park... which might be "cheesy" but could still be fun. Go see a show (broadway/off broadway). Rockerfella Center because Christmas decorations will still be up before New Years. There's always shopping. You could go ice skating at Rockerfella Center... that's so much fun. If you could get tickets to the Christmas show, the Rocketts, I know they perform a little bit after Christmas... umm... I think that's all I can think of right now!

Where ever the wind blows you my dear. Not knowing every detail and having it mapped out is always more natural and always best, which in turn produces the greatest result.
