Basil Caesar Salmon
4 salmon fillets
1/4 c caesar dressing
pepper
1 c caesar salad croutons, crushed (I used bread crumbs instead)
1/2 c grated parmesan
2 tsp dried basil
2 TBS Olive oil
Place salmon in greased pan. Spoon the salad dressing over fillets; sprinkle with pepper. Combine croutons, parmesan and basil. Sprinkle over fillets and gently press into dressing. Drizzle with OO. Bake uncovered at 350 for 15-20 min.
I could not believ how yummy this was... i make it very often.

Seasoned w/ Tony Chachare's or Cavendar's, cooked in a very hot skillet w/ butter & a touch of oil. Blacken it on both sides, then lower heat for a couple of minutes til it's done.
Canned: Make patties, of course.

my husband cooks the best salmon. Its my favorite meal. He seasons it with different things and cooks it outside on the grill. I melt butter and garlic and pour it on the salmon when its cooked. If there is any leftover for the next day i put it in the toaster oven and still yummy. Makes me crave it just thinking about it. :)

Avocado and Salmon Bruschetta:
Notes: We like seeded multigrain bread for these appetizers; assemble them up to 1 hour ahead; drizzle avocado with lemon juice to retain color.
4 slices whole-wheat bread
1 tablespoon prepared pesto
1 avocado (about 10 oz; see notes)
1/2 cup shredded lettuce or sprouts (optional)
1 to 2 oz. smoked salmon or trout, flaked
salt
fresh-ground pepper
Toast bread. Spread pesto on one side of each slice. Pit, peel, and thinly slice avocado. Arrange avocado on bread slices, then cut each slice into quarters. Top with shredded lettuce or sprouts (optional), and smoked salmon or trout. Sprinkle with salt and pepper.
Yield: Makes 16 appetizers (serving size: 1 bruschetta)

I coat both sides with Best Foods mayo, and sprinkle both sides with salt, pepper and herbs, and broil. Comes out awesome. First time I cooked it for my husband, he told me it was the best salmon he had ever had! You can also put it on the BBQ this way.

I wrap the salmon fillets in filo pastry, bake it in a low heat oven, and serve it with buttered spinach, creme fraiche and salsa....scrummy!!

other than salmon croquets.... I grill it on the george forman grill..Lightly seasoned with garlic and lemon WHOOOO WHEEE its making me hungry.....
