I am in college, and it seems like I cook at eat the same old stuff. I would like to make healthy (and tasty!) gourmet meals but I often find that I do not know where to look, or lack the creativity to put something together from ingredients off the shelf. Is there a good collection I can find in bookstores, or perhaps you all might have some good recipes?

Sometimes it's just nice to have a real book to kick back in a chair with...

"The Joy Of Cooking" might do the trick for you. Lots of additional information... it's a HUGE book.

My favourite (but not comprehensive) is the "A Guide To Good Cooking" by Five Roses Flour, it's Canadian but I'm sure you could get it through Amazon.

Here is one of my favourite recipes (not from either book):

CARROT-APPLE SAUCE MUFFINS

1 1/2 cups all-purpose white flour
1 cup whole wheat flour (could use all white flour)
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon grated nutmeg
1 teaspoon ground cardamom (optional, to taste; adds spice)
3 eggs
2/3 cup firmly packed light or dark brown sugar
2 teaspoons vanilla extract
1/3 cup vegetable oil
2 cups applesauce
3 cups grated carrots
1 cup raisins (optional)
Grated peel (no white attached) of 2 oranges (optional)

Preheat the oven to 350 degrees F. Lightly spray muffin tins with cooking spray containing flour [I use seasoned stoneware, no prep].

In a large bowl, sift together the flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cardamom.

In a medium bowl, combine the eggs, brown sugar, and vanilla, mixing well. Stir in the vegetable oil, applesauce, carrots, raisins, and orange peel. Add to the flour and mix just until incorporated.

Pour into the prepared muffin tins and bake until a tester inserted comes out clean, about 20 minutes. Cool 10 minutes on a wire rack, then invert and cool completely.

Makes 18 large, 24 medium or 36 small muffins

Go to www.kraftfoods.com. They have easy recipes and fancy recipes, but what is nice is that they are all reviewed and you can find the ingredients in the store. The variety and ease is there and that is what you want and they are all in a format that is easy to read and understand. Plus they have a recipe saver feature where you can save your favorites in your own recipe file, which is nice.

try taste of home.com. really good recipes there, and they are all tested before they put it on site. Everything from simple, and easy, to light, and tasty...........Enjoy!!!!
