Crab Rangoon Recipe: Crab Rangoon Recipe
Yield: 44 - 48 Crab Rangoon
Filling:
8 ounces cream cheese
8 ounces fresh crab meat or canned crab meat, drained and flaked
1/2 teaspoon Lea & Perrins Worcestershire sauce
1/2 teaspoon light soy sauce
1/8 - 1/4 teaspoon freshly ground white pepper, to taste
1 - 1 1/2 green onions, finely sliced
1 large clove garlic, finely minced
1 teaspoon red onion, chopped
1 package wonton wrappers
1 small bowl filled with water for wetting wontons
Oil for deep-frying
Directions:
Combine the crab and the cream cheese. Mix in the remaining filling ingredients one at a time.
On a flat surface, lay out a wonton wrapper in front of you so that it forms a diamond shape. Wet the edges of the wonton.
Add a heaping teaspoon of filling to the middle, and spread it out toward the left and right points of the diamond so that it forms a log or rectangular shape (otherwise the wrapper may break in the middle during deep-frying).
Fold over the edges of the wrapper so that it forms a triangle shape. Seal the edges, adding more water if needed

Cover the completed Crab Rangoon with a damp towel to prevent them from drying out while preparing the rest.
Heat wok and add oil for deep-frying. When oil is ready (the temperature should be between 360 - 375 degrees), carefully slide in the Crab Rangoon, taking care not to overcrowd the wok.
Deep-fry until they are golden brown, about 3 minutes, turning once. Remove with a slotted spoon and drain on paper towels. Cool and serve.
(To make ahead of time, prepare the filling and stuff the wontons and freeze without deep-frying. When ready to cook, thaw before deep-frying.)

Quick and Easy
Baked Crab Rangoons
1 can chunk crab meat, drained and flaked
124g Philadelphia Neufchatel cheese, softened
1/4 c sliced green onion
1/4 c mayo
12 wonton wrappers (cut your egg roll wrappers in half)
Preheat oven to 350*. Mix crab, cheese, onion, and mayo. Spray 12 medium muffin tins and place 1 wrap in each, allowing the edges to extend above sides of cup. Fill each wonton evenly with crab mixture. Bake 18-20 min. or until edges are golden brown and filling is heated through.

"The crunch of this wok-fried appetizer is doubled with the addition of chopped pea pods and Bok choy."
INGREDIENTS:
1 quart oil for frying
1 tablespoon vegetable oil
1 clove garlic, minced
2 tablespoons minced onion
1 medium head bok choy, chopped 2 tablespoons chopped snow peas
1 (6 ounce) can crab meat, drained
1 (8 ounce) package cream cheese,
softened
1 tablespoon soy sauce
1 (14 ounce) package small won ton wrappers
DIRECTIONS:
1. Heat oil for frying in deep-fryer or large, heavy saucepan to 375 degrees F (190 degrees C).
2. Heat 1 tablespoon vegetable oil in a large skillet. Add garlic and onion, and saute for 2 minutes. Add bok choy and pea pods, and stir fry until the bok choy and pea pods are crisp-tender.
3. In a large mixing bowl, combine crab, cream cheese, soy sauce and sauteed vegetable mixture. Drop mixture by 3/4 teaspoon into the center of a won ton wrapper. Fold the wrapper in half to make a triangle. Seal the wrapper around the mixture by wetting your finger with cold water and pressing the ends together.
4. In batches, fry the dumplings in the prepared oil until golden brown. Drain on paper towels.

its not for exactly woontons but it is a cream cheese and crab stuffing....use equal parts cream chees to equal parts crab meat ....you can use the cheap canned crab meat....chopped parsley 1 tsp lemon juice and a tsp of old bay seasoning.......
