technically, I know it sounds daft but a green banana is actually ripe at this stage.It's when it starts to turn yellow that it becomes over ripe. But I love yellow ones that are black at the ends !

With a bit of a green tinge, the ripe ones are way to mushy.esp. with dark spots.

More toward the green tinge side.
Once they get all soft and ripe with the brown spots, all they are good for is muffins or banana bread!

Just ripe - not over ripe as mushy bananas are yuk.
Like them in banana custard - and the best ever tasted, cost a few pennies extra per lb. are those from the carribean - yum, yum.

just under the yellow stage, with a slight bit of green, but not too much....for my taste there is such a small window of good banana eating opportunity that when i see a banana in "ripeness perfection" i gotta have it then and there. it's got to be firm enough to, when you take a bite, that the banana bite splits into 3rds as you press it against the roof of your mouth with your tongue. yum.

Definitely ripe bananas, that are starting to get a few black spots - the best flavour.

Ooohhh good question. I love the fresh from the store greenish bananas. My mom always says "those aren't ripe yet!!!" But I love them that way.
