Hi hon, here's how I make it, stolen from my sister. Blitz onion & carrot in food processor, then brown mince in pan with veg. Pour off the fat, then add oxo cube, tinned tomatoes, tomato puree and herbs. Season & simmer for at least 30 mins, adding water or milk to stop it drying out. the carrot adds sweetness, also nice with celery in it. Long,slow cooking is the key-yum, that's made me hungry now!

Along with your tomato suace add a can of tomato paste and some extra liquid. Simmer this sauce for 2 to three hours... This is what develops the natural sugars. Sauce hits a point when the sauce breaks down and thickens to a rich silky consistency. It sticks to the pasta better, and is not drippy. Your acid will be gone.

Just to be a little different try using tin tomatoes with herbs. I know it is not fresh but they are a lot more mellow. If you do not want to add any more herbs then tinned peeled tomatoes. Good cooking.

yes tomatoes are very acidic... the best way to get rid of the is how long you cook it for, simmering it at a low temp helps... plus seeding your tomatoes helps alot too, that's where most of the acid and bitter taste lies. plus the kid of tomato you use, romas, are more sweet.

Adding a little sugar to your sauce will get rid of the acidity. Just add a little and taste and keep adding until its just right>

Zildaisy and blondie,have it right,but I do all three,carrot ,cheese and a bit of sugar.Using fresh tomatoes and slow-cooking makes it nicer,too.
