Goat, especially if allowed to eat wild herbs, is the tastiest.

Lamb is delicate in flavour and very tender, mutton (sheep or ram - the only difference is the sex of the animal, the taste is the same) is stronger in flavour it makes good currys and stews as it is less tender and takes longer to cook. Goat is strong in flavour and has a different taste to sheep or lamb, its a bit more rangy and gamey (it's just a different flavour). Older goat is a bit stringy, kid (baby goat) is still a different taste to lamb, its like goat but but more tender and sweet.
In a lot of countries, both sheep and goat are called mutton.
What meat you use depends on your recipe. If it is a heavily spiced dish or has a long cooking time, sheep or goat is what i recommend. If it is plain or takes a short cooking time, I recommend lamb or kid.

Lamb is a young sheep, so it's more tender. Ram would be pretty gamy, and I've never tasted goat, but it's probably similar to lamb if it's young enough.

The best is lamb. Goat meat has a very pungent smell that could be off putting.

I've never tried lamb but I've heard that bar-b-que goat is so tender it falls off the bone. Maybe I'll try it one day.

Lamb is baby sheep. Adult sheep meat is Mutton. I am not sure which is the best, but I can tell you that lamb is VERY tasty. Good with mint jelly.
