I worked in a restaurant when I was younger where we made our own onion rings. After taking large onions and slicing them (we used an industrial bread slicer to slice the onions), we would punch out the rings into a bag and use the centers for chopped onions elsewhere.
Then we would dip them in a thin pancake batter and then into a mixture of breadcrumbs and flour. Here was our secret – We put the coated rings in the cooler over night and the next day before we used them, they were dipped and coated again. This assured the crust adhered to the onion and the onion didn’t come out when you bit it.

Fried Onion Rings
* 1 large Bermuda onion
* shortening or oil for frying
Batter
* 1 cup all-purpose flour, sifted
* 2 teaspoons salt
* 1 1/2 teaspoons baking powder
* 1 egg yolk
* 2/3 cup milk
* 1 tablespoon salad oil
* 1 egg white
Peel onion and slice about 1/4 inch thick; separate into rings. Cover with cold water and let stand for 30 minutes. Drain and spread out on paper towels. Make batter. Sift flour, salt and baking powder in bowl and set aside. Beat egg yolk slightly; stir in milk and salad oil. Add to flour mixture; stir until smooth. Beat egg white until stiff peaks form; fold into batter. Heat 1 inch of shortening in saucepan to 375F. Dip onion rings in batter; let excess batter drip off. Drop several rings at a time into hot fat and fry until golden. Drain on paper towel.

Buy a tempura batter mix dip the onions in and drop in the hot oil and eat.
Tempura can be found near the fish counter. it's used for deep frying shrimp.

vidalia onions, dip in flour, then egg wash (egg w/ water or milk added) then egg again, then a seasoned flour batter, that you can find at the store in the shake and bake isle. Fry to a golden brown. . .yumm mmm m m . or just go to the food network

but i have to tell ya something, whoever thought of putting an onion ring on a burger with cheese, bacon and bbq sauce is an absolute genius.
