LEMON UPSIDEDOWN CAKE
One of my absolute favorite cakes!!! It is unique, tart, sweet, & beautiful. Just goes to show that pineapple hasn’t cornered the market when it comes to upside-down cakes.
7 lemons, washed & sliced very thin
1 1/2 c. sugar
2 T. cornstarch or 4 T. flour
1/2 tsp. salt
3/4 c. hot water
3 T. lemon juice, fresh
1/2 c. butter, softened
1 tsp. lemon peel, grated (zest)
1 egg
1 c. flour
1 1/2 tsp. baking powder
1/2 c. milk, or half & half cream
Preheat oven to 375 degrees F. Grease 8” round or square *GLASS dish. Wash & slice (very thin) unpeeled lemons, & arrange on bottom of dish; set aside.
Glaze: In small saucepan, combine 1 c. sugar, cornstarch or flour, & 1/4 tsp. salt. Stir in hot water & lemon juice. Cook & stir over medium heat until mixture comes to a boil; boil 1 minute. Remove from heat, & add 1/4 c. butter, stirring till melted, then add 1 tsp. lemon zest. Spoon half the mixture over the lemon slices. Reserve remaining glaze.
Cake: In large mixer bowl cream 1/4 c. butter & 1/2 c. sugar at medium speed until light & fluffy, scraping sides of bowl occasionally. Beat in egg & 1 tsp. lemon zest. Meanwhile, combine 1 c. flour, 1/4 tsp. salt, & baking powder. Reduce speed to low. Add dry ingredients alternately with milk or cream, beating after each addition just until dry ingredients are moistened. Drop batter by tablespoonfuls into pan. Using a spatula carefully spread batter over glaze & lemons. Bake 35 min., or until toothpick inserted in center comes out clean. Cool 5 min. on wire rack, then invert onto serving plate. Serve warm, topped with reserved glaze. May also top with whipped cream along with the glaze, if desired. Serves 8, at about 390 calories per serving.
(NOTE: because of the high acid content of the lemons do NOT use a metal cake pan---believe me, I speak from experience. For the same reason, do NOT cover with aluminum foil when storing finished or leftover cake.)

Tres Bien Chocolate...now don't judge this by the simplicity as it is easy to make but will get many ooooos and ahhhhhs.
This can be doubled or tripled as you wish.
2/3 cup whole milk
1 egg
2 T sugar
pinch salt
1 cup chocolate chips
2 T hazelnut liquer or dark rum or 2 tsp rum flavouring
4 demitasse cups or nice dessert cups
1 cup whipping cream
2 T sugar
Heat milk til it boils. In a blender beat egg, sugar, salt, chocolate and liquer. Run on low and blend well then slowly pour in boiling milk and blend for 2 minutes. Spoon this into the 4 dessert dishes and chill or better yet, partially freeze. At dessert time..top with whipping cream that has been beaten with sugar and to excite it a tad ,decorate it with a cheery...enjoy!!!!! :)

Chocolate Trifle
Bake a chocolate cake and let cool.Cut in bite sized pieces and place half of it into a very large bowl.Mix 3 boxes chocolate instant pudding with 5 1/2 cups milk.Put half of the pudding on pieces of cake.Then top with half of a tub of cool whip,drizzle with Carmel topping,and pecan pieces.Start all over to make the same layers again.OMG!!!

OPEN BLUEBERRY PIE
9-inch baked pie shell (450F for 10 minutes)
wash and drain thoroughly >2 boxes (1 quart) blueberries
Mix in a saucepan: 1 cup sugar, 3 tablespoons cornstarch, 1/8 teaspoon salt, 1 cup water. Stir well, and add ONE CUP of the blueberries.
Cook and stir over low to medium heat until thick, about 15 minutes. Remove from stove.
Add the uncooked blueberries and 1 tablespoon butter.
Mix well and pour into cooled, baked, pie shell.
Spread over the top---1 cup heavy cream, whipped and sweetened.

How fancy do you want your dessert to be? Because I have a recipe for the richest, most delicious triple-chipper cookies ever! I don't know it by heart and I'm at work, but if your ? is stil open tomorrow, I'll give it to you.

BANANAS FOSTER (for two)- In a frying pan, 1 tbsp Butter, 3 tbsp Brown sugar and two bananas sliced length wise and halved. Cook on moderate heat adding rum and a pinch of cinnamon until bananas soften and the sauce begins to thicken (Caramelize). Remove from heat and serve over Vanilla ice cream (in large red wine glasses is nice) and serve immediately

Any kind of pound cake is good and it goes pretty far. Just find a basic recipe and add in whatever you like. Blueberries are almost always a hit
