What is the best type of avocado to use for guacamoloe?

It depends on what you have available. Best I ever had was one grown in Hawaii--almost the size of a football and delicious! The basic smooth skinned and rough skinned CA ones seem the same to me.

For not so good avocados, I add ricotta cheese and/ or parmesan cheese to the guac to flavor it up.

Haas avocados are the very best. They
are the ones with the black pebbly skin. They are ready to use when they yield to light pressure. They are the ones that make the creamiest guacamole. The green ones, Fuerte for instance, tend to be watery by comparison. I'd try diced onion, tomatoes, jalapeno pepper, garlic, cilantro and lemon juice in proportions depending on your taste. Salt, pepper and tabasco to taste as well. P.S. Don't mash the avocado. Dice it ; it will kind of mash itself when you stir in other ingredients but it will stay pleasantly lumpy.

Just make sure it's very ripe. Then add some salsa and a little garlic powder! In the produce section there are also guacamole seasoning packets that are very good.

They all taste good :) Try experimenting. The bigger ones usually have less flavor, but sometimes can be surprising! It's really all in how you flavor it anyway. Try experimenting with different things added like roasted red pepper, jalapeno or serrano peppers, different types of onions, garlic, etc. ect. It's something you just mess around with until you decide what you really like :)
