Kosher salt has more facets and clings to the food better. It has a less salty taste as well.
The down side is that it's not iodized so you need to supplement the lack of iodine with other foods.

Supposedly the difference is that Kosher salt wont send you to hell like regular salt.

Because the it follows God's dietary laws?? Really, I don't know. It depends on your personal taste. I like sea salt. Those kosher companies make awesome hot dogs though.

Chef's use it for two reasons:
It gives better finger feel, so when you grab a pinch you have better idea of how much you have
Because it's pure salt w/o additives it will not cloud soups or sauces. That is critically important when your making consomme`s and other clear soups.
