I love cottage cheese, but that sounds truly icky to me.

South Beach Diet Ricotta Dessert
Mocha Ricotta
1/2 cup part-skim ricotta cheese
1/2 tsp. unsweetened cocoa powder
1/4 tsp. vanilla extract (or coffee or chocolate, etc.)
1 pkg. sugar substitute
dash of espresso powder
5 mini chocolate chips
Mix all together in a dessert bowl. Serve chilled with a dusting of espresso powder and sprinkled with the mini chocolat chips.
Cappuccino Ricotta Crème
½ tsp. instant coffee granules
¾ tsp. Water
½ cup part-skim ricotta
1 pkg. Splenda
½ tsp. vanilla
Dash of cinnamon
Dissolve coffee granules in water in small mixing bowl. Add remaining ingredients and combine. Transfer to ramekin and chill.
Peanut Butter Cup Ricotta Crème
½ cup part-skim ricotta
1 pkg. Splenda
½ tsp. unsweetened cocoa powder
½ tsp. peanut butter
Combine all and chill.
Cinnamon Ricotta Crème
½ cup part-skim ricotta
1 pkg. Splenda
½ tsp. cinnamon
½ tsp. vanilla
Combine all and chill.
Chocolate Mint Ricotta Crème
½ cup part-skim ricotta
1 pkg. Splenda
½ tsp. unsweetened cocoa powder
1/8 tsp. peppermint extract
Combine all and chill.
Mounds Ricotta Crème
½ cup part-skim ricotta
1 pkg. Splenda
½ tsp. unsweetened cocoa powder
¼ tsp. coconut flavoring
Combine all and chill.
Baked Chocolate Ricotta Dessert
1 c. part-skim ricotta
1/2 c. low fat cottage cheese
1 egg
7 packets of Splenda
1/2 Tbsp. cocoa powder
1 Tbsp. sugar free chocolate syrup (e.g. DaVinci)
Combine ingredients in a food processor or blender and mix until smooth. Pour into a small (approx. 2 cup size) oven-safe dish and bake at 400 for 15-20 min. Chill before serving.
Mock Pumpkin Spice Ricotta Creme
1 cup part-skim ricotta cheese
1/2 teaspoons cinnamon
1/2 teaspoons vanilla extract
1/4 teaspoon ground nutmeg
1/2 teaspoons ground dried ginger
2 packages sugar substitute
Mix together all the ingredients and chill. Scoop into dessert bowls or hollowed-out mini-pumpkins and serve.

(phase 3 in the South Beach Diet)
INGREDIENTS:
12 vanilla wafers
3/4 cup fat-free cottage cheese
1 (8 ounce) package Neufchatel cheese, softened
6 tablespoons sugar
2 eggs
1 tablespoon grated lime rind
1 tablespoon fresh lime juice
1 teaspoon vanilla extract
1/4 cup low-fat vanilla yogurt
2 kiwifruit, peeled, halved, and sliced

DIRECTIONS:
Line 12 muffin pans with paper baking liners. Place 1 vanilla wafer in the bottom of each liner.
Process the cottage cheese in a blender or food processor until smooth. Combine the cottage cheese with the Neufchatel in a medium bowl and beat at medium speed until creamy. Gradually add the sugar and mix well. Add the eggs, lime rind, lime juice, and vanilla. Beat until smooth. Spoon the cheese mixture evenly over the vanilla wafers. Bake at 350 degrees F for 20 minutes or until the cheesecakes are almost set. (Do not over bake.) Let the cheesecakes cool completely on a wire rack. Remove from the pans and chill thoroughly.
Spread the vanilla yogurt evenly over the cheesecakes, and top each one with 3 kiwifruit slices
