Basic Biscuits

"This is a basic biscuit recipe with baking powder used as the leavening. They're easy to make and go with almost any meal."
Original recipe yield: 8 to 12 biscuits.

INGREDIENTS:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup shortening
3/4 cup milk

DIRECTIONS:
Preheat oven to 450 degrees F (230 degrees C).
In a large mixing bowl sift together flour, baking powder and salt. Cut in shortening with fork or pastry blender until mixture resembles coarse crumbs.
Pour milk into flour mixture while stirring with a fork. Mix in milk until dough is soft, moist and pulls away from the side of the bowl.
Turn dough out onto a lightly floured surface and toss with flour until no longer sticky. Roll dough out into a 1/2 inch thick sheet and cut with a floured biscuit or cookie cutter. Press together unused dough and repeat rolling and cutting procedure.
Place biscuits on ungreased baking sheets and bake in preheated oven until golden brown, about 10 minutes.

2 teaspoons sugar
1 teaspoon salt
1 to 1 1/2 cups heavy cream
5 tablespoons melted butter
Mix first four ingredients together with a fork to combine and fluff. Slowly pour in 1 cup heavy cream while stirring. Gradually add up to 1/2 cup more, until dough holds together and forms a ball. Knead for one minute on a lightly floured surface.
Pat out dough into a square, about 1/2 inch thick. Cut with a knife into 12 biscuits. Dip each biscuit into melted butter, coating all sides. Place on a baking sheet, 2 inches apart, and bake in a preheated 425 degree oven for 12 - 15 minutes, until lightly browned.
I'm a horrible biscuit maker--aside from Bisquick (which I hate) my biscuits are rotten. Very hard on the bottom, don't rise enough, and are tasteless. I found this recipe in my Fanny Farmer book a few nights ago and I gave it a shot. THE BEST I've ever had! I know 1 cup of heavy cream seems like a lot, but you have to figure the recipe doesn't call for shortening, crisco, or butter stirred in. You really should try them--you won't regret it! :)

I only use plain flour ( all purpose ) for ANY recipe even when it calls for a special flour... have had no problems !
