COUNTRY MEATLOAF
This is my homey version of meatloaf. The onions & bell peppers are not precooked, so they add a very slight crunch to the experience.
1 1/2 c. onion, chopped
1 c. bell pepper, chopped
3 T. dried parsley
1 tsp. black pepper
1 1/2 tsp. salt
2 cloves garlic, minced
2 eggs, lightly beaten
about 20 squares of saltines, crumbled
2 1/2 to 3 lb. ground chuck
2/3 c. catsup, & extra for topping
1 c. mozzarella cheese, shredded
Preheat oven to 350 degrees F. Crush dried parsley before adding to this mixture. Combine all ingredients in a large bowl, & mix well. Spray loaf pan or 9x13” baking dish with oil. Place meat mixture into prepared pan, & cover with foil. (NOTE: if you use the 9x13” baking dish, then shape meat into a loaf & place in center of dish. I like using the baking dish instead of a loaf pan, because the grease seems to drain away from the meat instead of baking into it.) Bake for about 1 hr. 15 min. Remove from oven & remove foil. Cover top of meat loaf with catsup, & place back into oven uncovered & bake for another 15 to 20 minutes, until done. Remove from oven, drain off excess grease, & let stand in pan for 10 minutes. Slice & serve hot, warm or cold.

EASY PLEASING MEATLOAF
2 lb. ground chuck
1-6 oz. pkg. Stove Top Stuffing Mix
1 c. water
1/2 c. barbecue sauce or catsup, divide
2 eggs, beaten
Preheat oven to 375°F. Mix all ingredients except 1/4 c. of the barbecue sauce. Shape meat mixture into oval loaf in 13x9” baking dish; top with remaining 1/4 c. barbecue sauce or catsup. Bake 1 hour or until cooked through (160ºF. center temp). Serve this comfort food with mashed potatoes & a steamed vegetable, such as broccoli. Makes 8 servings.

CHEESEBURGER MEATLOAF
1 1/2 lbs. ground chuck
1/2 c. fine cracker crumbs
1 egg, beaten
1/4 green pepper, chopped
1/4 tsp. dried basil leaves
5 oz. evaporated milk
1 c. cheddar cheese, shredded
1/4 c. onion, chopped
3/4 tsp. salt
2 slices of American cheese
Preheat oven to 350 degrees F. In a bowl combine all of the ingredients, except the 2 cheeses. Place the sliced cheese in the bottom of a waxed paper-lined loaf pan, & add the meat mixture on top of the cheese. Sprinkle the shredded cheese over all, & finish by layering on the rest of the meat mixture. Bake about 1 hour. Remove from oven, & let set about 10-15 minutes before removing it from the pan. Remove lining paper, slice, & serve. Leftovers can be rewarmed, or take the leftover loaf from refrigerator & slice about 1/2” thick or the thickness you like for hamburgers. Pan sauté the slices & put on hamburger buns. Delicious!

LIPTON ONION MEATLOAF
1 envelope Lipton Onion Soup Mix
1 1/2 lb. ground chuck
1 c. soft bread crumbs
1 egg
1/2 c. water
1/4 c. ketchup
Preheat oven to 350 degrees F. In large bowl combine all ingredients. In large shallow baking pan, shape into loaf. Bake 1 hour. Tip: Try using other Lipton Onion Soup Mixes, such as the one with mushrooms.

Spanish Meatloaf
Serves 6
1-1/2 lb Ground Beef, lean
1 (5.5 oz envelope) Wyler's ''Hearty Beef Stew'' Soup Starter
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)
Instructions:
Preheat the oven to 350ºF
In a large bowl add the soup starter, diced green chili peppers, and the diced tomatoes; mix until the liquid is absorbed. Add the ground beef and BBQ sauce and mix thoroughly until well combined.
Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal.
Bake for 45 minutes; drain any residual fat if necessary.
Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Here is a good southern meatloaf recipe
2 pounds lean ground beef
1/2 cup bread crumbs
1 medium onion, finely chopped
1 egg, beaten
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 can tomato sauce (tomato puree), 8-ounce (225 grams) divided
1/2 cup water
2 tablespoons cider vinegar
3 tablespoons dark brown sugar
2 tablespoons prepared mustard
2 tablespoons Worcestershire sauce
Method
Combine ground beef, breadcrumbs, onion, egg, salt, pepper, 1/2 can of tomato sauce and water.
Mix together well. Form into a loaf shape and place in shallow 7 x 10 inch (175 x 250 mm) pan.
In a saucepan, combine cider vinegar, brown sugar, prepared mustard, rest of tomato sauce and Worcestershire sauce. Bring mixture to boil.
Pour sauce over meatloaf.
Bake at 350 degrees F (About 175C) for 1 hour 15 minutes. Baste occasionally.

I found this almost a year ago while looking for a great meatloaf recipe. My husband refuses to eat any other kind, and everyone who has ever tried it raves over it! It's from www.allrecipes.com It's also very adaptable--if you don't have Ritz crackers, use saltines. Heck, one time I even used CheezIts, and it was fantastic!!
Rempel Family Meatloaf
1 1/2 pounds lean ground beef
1/2 cup crushed buttery round crackers
3/4 cup shredded Cheddar cheese
1 (1 ounce) package dry onion soup mix
2 eggs, beaten
1/4 cup ketchup
2 tablespoons steak sauce
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, stir together ground beef, crushed crackers, cheddar cheese and onion soup mix until well combined. In a separate bowl, stir together eggs, ketchup and steak sauce until smooth. Stir the egg mixture into the beef mixture, adding a little water if necessary. Shape into a loaf and place in a 9x5 inch loaf pan.
Bake in preheated oven 45 to 60 minutes, until no longer pink.

I shouldnt be telling you this but here it goes....I HAVE THE PATENT ON THIS!!!!
2 lbs of ground beef, not lean, put in a bowl and put in 2 eggs, a packet of onion soup mix, rip up 2 pieces of bread and throw it in there, add some fresh green pepper(diced), and fresh diced onions, sprinkle in a little salt and pepper, and a tsp. of allspice. knead up the goods, and shape it in a loaf. Make a pocket in the center of the loaf (like what you do with mashed potatoes to hold in the gravy). Cook at 350 for an hour. At 40 minutes add 2 cans of whole peeled tomatoes (juice and all) into the pocket, and finish cooking. You now have the best meatloaf youve ever laid your lips on.
(I cut up the tomatoes while still in the can, just try to cut them in 1/2, or 1/4's)

1 1/2 lbs. hamburger (not lean)
1 can of tomato soup
1 egg
1 package lipton onion soup mix
1 t. sage
1 can from the tomato soup of milk
1/2 c oatmeal
Mix together and bake at 350 for about 45 minutes to an hour depending on doneness. Drain off grease.
Mix together 1 c of ketchup, 1 T. brown sugar and 1 t. of nutmeg. Smear on top of meatloaf and cook 5 to 10 minutes more.

A very easy and tasty recipe is to soften a package of stove top stuffing in 1/2 cup of milk for 15 minutes and mix it with 1 lb. of ground chuck and 1/4 lb of ground pork....bake at 350 until done the way you like

2 lbs. hamburger
4 slices white bread - broken into small pieces
1 pkg. dry Ranch dressing mix
1 egg (beaten)
2 Tblsp. Worcestershire sauce
1/2 c diced onions (or more to taste)
1/2 c diced green bell pepper (or more to taste)
Mix all ingredients together, pat into desired shape and put in pan sprayed with Pam. Bake at 350 for 30-45 min. Check doneness by sticking knife in middle...done when juice runs clear. Serves 6-8.

11/2 lbs hamburger
1 onion (diced)
2 eggs (beaten)
1 cup catsup
1/2 loaf bread
salt&pepper to taste
Mix eggs, catsup, and crumbled bread together until bread is saturated, add onion & salt and pepper, add all this to hamburger and mix well! May top with catsup & a little brown sugar ( mix ) Bake 350 degree oven for approx. 30/45 minutes

to a 1 lb of beef add 1 egg 1 cup bread crumbs (can sub rolled oats (not cooked)1 tbsp w/o sauce 1/2 cup fine chope celery ..onions...and 1/2 cup shreeded carrots......salt and pepper....1 cup diced tomatoes.mix throughly and make a loaf now in the center line 3 hard boiled eggs and seal in the center......cover top with catsupbake for 45 mins covered and 15 minutes uncovered..let rest 15 minutes before slicing.........temp 300
