basically, a fat is a 3 carbon sugar molecule with 1 long carbon-hydrogen chain attached to each carbon of the sugar.

Carbon-to-carbon bonds can be either single, double or triple bonds. A saturated fat means that no double or triple carbon-to-carbon bonds exist in the chains. A mono-saturated fat is one in which there is one double bond in one of the chains (ie, fewer hydrogens) and polyunsaturated mean there are more than one double bonds in the chains.

Has to do with the chemical structure. Saturated fat is one where the organic portion of the fat has no double or triple bonds (thus its structure will be CH3CH2CH2---, etc.).

The others are not monosaturated and polysaturated, but monoUNsaturated and polyunsaturated, meaning there is one double bond in the organic portion of the fat in the former and more than one double bond in the latter.
