There is some validity to the idea of waiting a couple of dates before cooking for a person. Having said that the best meal to cook for a person is a meal that you know how to cook well ; that the preparation doesn't take all day and thus wear you out and that when it's all done you can actually sit down and enjoy it.
Now that I'm single again ,for a first meal at my house I will make :
pork tenderloin with green peppercorn sauce
couscous with colorful finely minced vegetables [brunois cut]
And either fresh green beans or asparagus w/saute`d julienne red and yellow peppers
Result: healthy , easy and very attractive food
Total prep and cooking time under an hour -serve plated

Not looking to go on a second date? NEVER cook for a first date. The results are unpredictable. Do you know the culinary likes and dislikes of this person? If not pick up the phone and make reservations.

I'd make something that goes in the oven - like a Roast Beef, Turkey, or Chicken. Be sure to serve some good side dishes - and make a nice salad. Don't forget a home-baked dessert.

Presentation is going to be key as well. Make sure the food looks nice.

Oh yeah, wear a nice apron. Whether you are male or female, a date will always like that and you'll score early points.

i made my husband chicken alfredo on our first date. and it was really easy. i used the pasta roni chicken alfredo, i fried some chicken tenders up using just some cooking oil, and slightly seasoning them, then i added some broccoli and peas and what not to it. i mixed everything but the chicken in and when i served it i placed the noodles on the plate and placed the chicken on top. i also had a nice bottle of Black Swan Chariz, it was wonderful, my husband loved it and still talks about it to this day.

Spaghetti and meat balls. You can tell a lot about someone by how they eat spaghetti and meat balls.
Or, if you're daring, something you eat with your hands. Eating with your hands is very sensual and disarming-it breaks the ice. In How to Lose a Guy... Mathew McConaghey's character took the girl (don't remember her name) for lobster on their first date. You can be cool and 'all that' with rib sauce or garlic butter running to your elbow. Besides. they lived happily ever after... ;-)

Personally, I feel cooking for someone on a first date is too personal...I would think that should be left for a third or fouth date...

maybe some finger foods, nothing sloppy

What is it with all these baked birds?

I think the best thing to do is to ask your date what some of their favorite dishes are and go from there!

Maybe they love lasagna? ...Maybe seafood? .. Maybe they hate chicken?

They already know they're coming for dinner.. so get an idea of what kinds of things they like before you tie on the apron.

Also~ All Recipes is probably the best sites on the net for checking out recipes, and reading the reviews, tips, and suggestions of the people who actually tried them. http://allrecipes.com/default.asp

Have fun! (But ask what they like first!) ;o)

Whatever you cook, make sure it is easy to eat with a fork and knife... no one wants to have to lick their fingers on a first date...or struggle cutting too-tough meat! And whatever you do, go light on the salt...instead, use spices that have no sodium so you don't over-salt your food. If you do cook pasta, make sure it is "forkable" pasta, like bow-tie pasta - spaghetti can wind up being a bit messy...and who wants the social pressure of having to wind it up on the fork correctly? Good luck!
