Because the trinity implies belief in Jesus as the Son of God and in the Holy Spirit as a separate being.
To the Jews, Jesus was a rebel and a blasphemer (because he dared declare himself as the son of God)
To the muslims, Jesus was just another prophet

The Trinity is NOT polytheism no matter what you read above from inexpert posters who do not even belong to the religion in question. Such an opinion betrays a very, VERY poor understanding of Christian theology.
Christianity is admittedly a hypostasic form of monotheism - meaning that while God may be of one substance, he may enjoy more than a single subsistence (and does employ three that we conceive of.)
But Christianity certainly IS monotheism: this two-millenia refined hypostasic view has always been extremely careful to preserve the idea that "God is one God." To not grasp that is to not grasp some of the most fundamental basics of Christianity, and a person not grasping it should probably limit their own comments about the matter, since it is so clearly out of their competence.
As to why Muslims and Jews do not worship the trinitarian conception of God, the answer to that is exceedingly simple: because they are not Christians. The answer is really no different than why Christians do not use the Quran or Talmud as a holy scripture - because they are not Muslims or Jews. :-)
P.S. and no, it is NOT polytheism, and simply adding the "definitely" tag is not enough to make it so, no matter how ignorant an individual may be of hypostases in Christianity...

True Christians don't believe in the trinity. They believe it is a God dishonoring teaching, that came about 350 years after Christ.
Because the trinity is part of the great apostasy that Paul said would come, prior to Jesus return.
According to several reference works, not only is the concept of the trinity not in the bible but it is contrary to the teachings of the bible. The New Encyclopædia Britannica, The New Encyclopædia Britannica, The Encyclopedia Americana to name a few.
In The Encyclopedia Americana we read: “Christianity derived from Judaism and Judaism was strictly Unitarian [believing that God is one person]. The road which led from Jerusalem to Nicea was scarcely a straight one. Fourth century Trinitarianism did not reflect accurately early Christian teaching regarding the nature of God; it was, on the contrary, a deviation from this teaching.”—(1956), Vol. XXVII, p. 294L.
Therefore those who quote John 1:1, John 10:30, etc do so out of context.
(Romans 15:4-6) . . .” 4 For all the things that were written aforetime were written for our instruction, that through our endurance and through the comfort from the Scriptures we might have hope. 5 Now may the God who supplies endurance and comfort grant YOU to have among yourselves the same mental attitude that Christ Jesus had,
6 that with one accord YOU may with one mouth glorify the God and Father of our Lord Jesus Christ.

Nobody can tell you why people believe that which they do. All of religious belief is in the imagination of the believer. There are and have been thousands of beliefs since the beginning of time. They come and they go.
If Christians can make sense out of their three-in-one God, great we should all be happy for them.
If the Jews and Muslims see it in a different light, that's great also. The Shintoists believe that their emperor is directly related to the Sun God. If you don't agree, fine.
The Hindus worship Gods with six arms. If you want your God to have more arms, good imagine him with as many as you would like. If you don't believe that Pali lives in Haliakala, you're not required to. So, to sum it all up, believe whatever you want to, and let the other guy alone with his beliefs.

In response to one of the other people who responded, Christians are also monotheistic. Please study further to understand the concept. It's kind of like a cherry pie. You may cut the pie into 3 pieces and you'll see the separations on the crust but inside it's all the same filling. The Jewish, at least the non-Messianic Jews, don't believe Jesus was the son of God, he was just a prophet to them. Muslims believe Jesus was just a good man and teacher.

Muslims worship the almighty God who created the whole universe and sent the messengers including Moses, Jesus and Muhammad (peace be on them).
Trinity threatens the golden truth of divine religions- "monotheism".
Islam is based on strict monotheism.

because the trinity is polytheism. jews and muslims are monotheists.
"The Trinity is NOT polytheism no matter what you read above from inexpert posters who do not even belong to the religion in question."
oh, its definitely polytheism. monotheism is the belief in a single INDIVISIBLE G-d. we don't worship parts, or aspects, or representations, or physical manifestations, or any division of G-d. thats idolatry. next you guys are going to be worshipping G-ds pinky finger, i bet.
hinduism also believes in a single god who has different "aspects" that can be worshipped. why is hinduism polytheism, but christianity is not? there is no difference. christians also make images and idols of G-d and jesus - which is EXTREMELY forbidden in the bible and is put right into the same category as idolatry.
