I hear to just let it soak until it's tender and then bake it for 30 mins at 350 degrees.

What about the skin? Do I just peal it off and throw it away after it's baked? It's not edible, is it?

NO!!! Bake it IN IT'S SKIN!!
That's where half the flavor is.
Just Gut (the seeds), shake brown sugar over & bake
@ 350deg till done. (about 45-60 min.)
Just SPOON it out when cooked
(Assuming you don't like the flesh.)

My recipe doesn't call for soaking, and it is Delicious. The peel will remain on, if your baking the eggplant like a baked potatoe, other than that, just dispose of it, since it is difficult to digest.

My Favorite:
1 Medium Eggplant
1/3 Cup Butter, melted together with 2 T. X Virgin Olive Oil.
1 Cup Italian Bread Crumbs
Homemade Spaghetti Sauce, or use from jar of your choice.
Fresh Parmesan cheese, grated (As much as-you like).
*Pare & Cut Eggplant into 1/4 inch slices crosswise.
*Pat Eggplant with paper towels to reduce wetness.
*Dip slices into butter and oil mixture.
*Then into bread crumbs.
*Place in single layer on lightly greased baking sheet.
*Pour Spaghetti Sauce Over Top.
*Sprinkle Parmesan over the sauce covered slices.
*Bake 25 to maybe 30 minutes, in preheated oven
*Or until Tender.

No need to peel it it is perfectly edible and nutritous. Here is my favorite eggplant recipe. Slice the eggplant in half lengthwise and hollow out the center and cut up or mash what you took out. Mix up your favorite seasoned meatloaf mix and add the eggplant mash to it and stuff both sides of the eggplant and bake like a meatloaf. It makles for a great dish and you can put your favorite tomato/spaghetti sauce over the top to make it evn tastier yet.

The skin is edible-I never peel it. Slice in thin strips , dip in egg bath, dip in bread crumbs and fry in 2 inches of oil or bake [greased pan] in 350* oven for 30 min. or til golden brown.. Yummy!

Slice it lengthwise with the skin on.

Layer the slices between paper towles.

Either salt them well or soak them in milk.

Rinse or drain (either process removes the bitter liquid in the seeds)

pat dry...

Roast in the oven in olive oil with pepper on 400 degrees for about 20 to 30 minutes depending on how much you have?

Take out and eat as is, skin and all on some crusty bread with roasted red peppers and roasted garlic cloves or red onion & some really good Parmesan slivers.

OoOoOoOh Yummy! Makes a great sandwhich!

actually it is edible ,but most dishes require peeling it off so guess its thrown away

i peel mine before i bake it but i only make eggplant parmesean...and egg plant ratouille..so i don't want the peel....
