You can use any fruit to make jam. Some are better than others but all can be used. Apple is usually made into apple butter but I guess you could call it jam. Cranberries make a good pie with raisins but I have never heard of cranberry jam. Food for thought.

I've never met a fruit that was only in pies and not jam...which ones are you talking about? (sorry, not trying to be rude, but very curious now!)

Like what??? Maybe banana as in banoffee pie...thats all though I can think of...
Also whilst on this subject although its kind of the other way around, I have had pineapple jam but never pineapple pie! Pineapple tart (on top with fresh cream) sure! But never in a pie. Hmmm.

Pectin. Some fruits have it, some don't. It's what makes the jam gel.

i can't think of any pie fillings (fruit that is not in jam..jam even uses more fruits such as boysenberries...example i had strawberry ruhbard pie and had jam also...so io say your question is misleading...do not use tomatoes as example as i know a tomato pie recipe...

guess it could be they are harder to process compared to the normal fruits used
common jam-making fruits like orange & grape have a high water content so its easier to cook
they are also easier to peel/chop

certain fruits such as kiwi and pineapple wont allow gellatin to set so are not used for this. if they appear then they may have been dried and used this way.
