Well what my family loves is meatloaf burgers. Make your meatloaf mix like you would to make meatloaf of course!. Make into patties and grill. Serve on buns. You'll think that you are eating regular burgers but your not. I make them during the summer when I get tired of having the same old bbq burgers. My oldest simply loves them. =)

Quick and easy taco casserole.
You will need:
2lbs of ground meat
one onion (if your family likes them, if not leave out)
1 package of tortilla chips
2 cans of Cheddar Cheese soup
2 cans of Ranch Style beans
2 cups of Shredded Cheese
In a 10 inch or larger skillet brown the meat and onion until done. Added the ranch style beans(juice and all) and let that simmer for a couple of minutes to mix the flavor together.
Preheat the oven to 350 degrees
In a casserole pan put a layer of the tortilla chips (I crush them but you could use then whole), a layer of the meat and bean mixture, spoon some of the cheddar cheese soup over that and then start all over again until you have used all of the ingredients. Last put the shredded cheese on top and bake it in the oven for about 20 minutes or until the cheese melts.
Toss a little salad and dinner is through.
For easy clean up... you can line your casserole dish with aluminum foil beforehand

We were a family of five kids so we had different casseroles with ground beef a lot. An easy one was ground beef sauted with onions and kidney beans. Eat with ketchup.
We also had "stroganoff". Add cream of mushroom soup to the ground meat and some mushrooms.
We also had ground meat with mac and cheese and leftover or frozen mixed veggies.
Oh yeah and also meatloaf. Add two eggs, 1/2 cup ketchup, two slices of bread that you crumble by hand, a packet of Lipton's Onion Soup mix and a quarter cup water. Bake at 350 for about 40-45 minutes.

Make a Quick Chile.
Pick up a can of Red Beans, Chile Seasoning, Grated Cheddar Cheese, 1 Medium Onion, 3 stalks of Celery, bag of Nachos. Chop the veggies, saute them, put aside, brown the meat add the veggies, Chile seasoning then serve with cheddar cheese and eat with Nachos.

Taco Night... if you have taco bread or better yet, wrap bread or large tortillas. Add taco seasoning (you know costco sells it in a huge jar) after you've sauteed onions. Put out sour cream, salsa, cheese, tomatos and shredded lettuce. You can also roast some whole kernel or frozed corn and Mexican rice. YUM!
OR you can make meatloaf. Add an egg, a can of mixed veggies (strained), a cup of bread crumbs, your favorite seasonings, barbecue sauce (1/3 cup inside, 3 tbls on top). Mix it all together and pat it into a loaf in a pan and cook it for 50 minutes at 375.

Sopa de Fideos,... (pasta soup)
*****short-cut **Knorr mix******
* 1/2 package of Vermicelli
* 8 cups of chicken broth
* 1/4 onion diced
* 1 clove of garlic minced
* 1 sprig of parsely (optional)
* 1 serrano chili
* 1 6oz can of tomato paste
* 1/8 cup (approx) oil
* salt to taste
* pinch of cumin
* 1 lb scrambled, browned hamburger
* 1 can pinto beans
Procedure:
1. Fry the vermicelli until golden, stirring it so it doesn't burn. Drain off the remaining oil.
2. Mix tomato paste, garlic and onion and broth. Pour over
the vermicelli.
3. Add the parsley, chili and salt, cumin, beef, and beans. Let boil until the vermicelli is soft.
Serve in a bowl warm
Optional Toppings
shredded cheese
Serve Plain or with tortillias

Meatloaf....I actually made it last night and it was delicious. Use 1 1/2 - 2 lbs hamburger, 1/2 cup ketchup, 2 eggs, 1 1/2 cups bread crumbs, 1 tsp. garlic salt, 1 tsp ground mustard and chopped onions and mix up...add more breadcrumbs to get your desired texture if necessary. Then mix 1/4 cup of ketchup, 1/2 tsp. of ground mustard and 2 tsp of brown sugar...apply this to the top...bake for about an hour on 400.....good luck and enjoy!

Try Homemade Gourmet Burgers.
Add some chopped red onions, bell pepers (multicolors), garlic, cilantrillo and culantro to the ground meat mix. Add one egg. Make hamburgers portions.
With your thumb press the middle/center making a small hole fill it by and adding your favorite cheese (Roquerfort, Blue Cheese, Cheedar, Monterrey Jack, Swiss, Brie, etc). Cover the hole back with meat.
You can make them on a grill or ona a pan.

How about cheeseburger pie? It doesn't get much easier than that. :)
Impossibly Easy Cheeseburger Pie
1 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick® mix
1 cup milk
2 eggs
1 . Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
2 . In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.
3 . In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.
4 . Bake about 25 minutes or until knife inserted in center comes out clean.

Get over to the store and buy a box of Hamburger Helper- Chili Mac. Serve it with a good leafy salad. And don't forget the iced tea,lol.
