Try grited mashed potatoes with roasted garlic, red onion, bell peppers (multi colors), bacon, lot of shredded cheese, scallions and fresh parsley. (All of these chopped). Do not peel the potatoes, mashed with the skin on it. Add some fresh herbs and chopped garlic during the boiling.
If you have fresh rosemary, now it is the time to use it by sprinkling some of it on the top of the meat and around the plate as decor.

Mashed Potato with Rosemary goes really well with Lamb. Drizzle over some gravy as well - yummy, I'm hungry now!!

Since lamb chops are fairly upscale, make the mashed potatoes with red new potatoes. Top with butter, sour cream and some chives or parsley.

Mustard mash potatoes, to soak up jt gravy. Add a little red wine to the juices in the pan after frying the chops, this deglazes the pan and makes a nice wine sauce.
