Grilled vegetables, on the same grill with the shrimp. You can grill sweet peppers, sliced yellow and green squash, and sliced eggplant. Drizzle olive oil on the slices and add a generous sprinkle of Italian seasoning to each slice. No need to turn them.

You guys are making my mouth water - shrimp has to be my number one favourite food, no contest!

Rice just somehow sets off shrimp beautifully. You can do plain steamed white rice, herbed or flavoured rice (there must be twenty different brands and flavours out there - mushroom is usually good, or mixed-with-wild), fried rice, rice congee...

For really fast and easy, I like to get the Dainty brand canned rice and throw it in a deep frying pan with some milk. It heats up, absorbs the milk and fluffs up. Then I beat two eggs and stir them through the rice, letting them cook in threads.

Other ideas:

Snow peas, steamed.
Buddha's Delight veggie mixture.
Grilled veggies (as so many people have said, a great complement to grilled shrimp)
Garlic bread - classic, simple, and delicious!
Roasted potatoes with rosemary.
Firm tofu, egg-fried.
Yellow and green zucchini chips (slice thin, sprinkle with salt, let sit to 'draw out' the juice a bit, dredge in flour, shake off excess, drop into hot oil in a tall pot or deepfryer. Yum!)
Oven-baked french fries (if you're going for casual)...
Fresh garlic biscuits or breadsticks.
Pasta with a simple white or parmesan sauce (again, there are plenty of ready-to-go brands out there. Spinach fettucini sets off the coral colour of the shrimp nicely...)

Assuming you're using skewers anyway, marinate some peppers of various colors and onions in olive oil, garlic and pepper, cut into sections, skewer with the shrimp to add some flair and color to the presentation as well as yummie crunchies for the folks to enjoy. Then, I am a big fan of dirty rice and beans with chunks of Andouille (Cajun style) on the side with grilled shrimp.

Throw some veggies on the grill, too. Just rub down w/ some olive oil, kosher salt, a little pepper, and whatever herbs sound good to you. That and some French Bread is plenty, IMO. Although the garlic-cheese grits mentioned first don't sound bad, either.

Curried rice! Put about a Tbsp of olive in a pan and heat, cook minced garlic and ginger for a couple minutes. Add 1 Tbsp curry powder. Add 1 cup basmati rice, stir to coat and toast a little. Add 2 cups chicken broth or stock. Stir, put a lid on it and cook for 17-20 min. depending on your stove. Near the end of the cooking you could add frozen peas if you wanted. Garnish with green onions and cilantro.

I totally love this.

My grandma always makes a side pasta salad when we eat seafood. Use different shaped pastas, or if you like dif. colors, boil them w/ a Little oil in the pot,.. Strain it and add Italian seasoning ( oregano, basil, etc) and toss with Italian salad dressing.
