Here's an easy one: 1 pkg cream cheese, 1 pkg instant pudding (can be sugar free), small container half&half, sweetener of choice. Leave the cheese in a bowl to soften until it's about room temp., then add sweetener, I use nutrasweet and about 8 packets; whip it till it starts getting kinda smooth, add the pudding and beat some more, add the half&half and keep beating a few minutes longer until it's thoroughly mixed. Refrigerate a little, half hour is usually long enough. If you use sugar free pudding and non-sugar sweetener, you have a chocolate cheesecake mousse that your diabetic friends can eat too; or you can use regular pudding and sugar (about 1/8 to 1/4 cup) and have a regular version. The longest time period of the whole thing is waiting for the cheese to get room temp so you can beat it. I usually put mine in a graham cracker crust, but you can put it in bowls or eat it right out of the mixing bowl if you're really starving! I vary this by adding things: chocolate bits, m&ms, etc. or changing the pudding, which changes the flavor. Jello makes a great white chocolate mix and it comes in sugar free, which is great for me and my hypoglycemic friend! (I'm diabetic) BTW: this IS NOT low calorie!

This is from a woman who was low-carbing so it is actually a diet recipe but you would never know it. I can't give you any proportions or amounts but it is a good place to start.
Whip heavy cream until it is peaky. Add sweetner packets and baking cocoa until it is the way you want it to taste. Spoon into serving dishes and chill. For garnish, you might consider shaved chocolate curls (treat a hershey bar to a carrot peeler), a dusting of cocoa powder, a single berry/cherry/orange slice, a sprig of mint, a hershey's kiss, a drizzle of chocolate syrup or melted nutella or peanut butter, or more whipped cream.
