Because people with religious beliefs have a tremendous affect on the laws under which they live. Atheists, agnostics, and I would prefer to be guided by our own moral guidleines than by the arbitrary decrees of an ancient text.

This is what they must do. You are correct so deep down inside they know God exists and that is why they are so drawn to try to dispel the fact that He does.
If they knew beyond a shadow of doubt that He did not exist they would not have to fight, argue or try to persuade so hard.
