Here's an answer from a Christian standpoint:
Fasting accomplishes three things.
-First, as someone else mentioned, it helps you fine tune your level of self-control. It isn't easy to abstain from these things for a day. Being able to control yourself is arguably one of the most important attributes a person can have...religious or not.
-Second, if you fast for a long period of time because of religious reasons, you will think of your religious beliefs (in my case, Jesus), everytime you see food, or whatever you happen to be fasting from. This is a good way to get you to think about God a bit more during your daily routine.
-Third, fasting helps you become a healthier person (depending on how you do it). I have fasted from all liquids besides water for a two month period (on a couple occasions), and I lost a good amount of weight, and I also gained a good amount of muscle.
Lent is a Christian holiday in the Spring before Easter where it is common to give up something for forty days. This is a great time to really test your self control, while at the same time becoming more involved with your spiritual side by simply thinking about God more often then you normally would.
The first two reasons I mentioned apply to abstaining from sex as well (or anything else for that matter).

The benefits of fasting are numerous. Undoubtedly the greatest of these is the fact that in fasting is a great expression of worshiping God. Moreover the act of fasting is a great exercise in self-control and the development of will power.
As a secondary goal, and through the experiencing of hunger, fasting is a means for developing sympathy for the less fortunate, and consequently learning to be more charitable and more thankful and appreciative of God's bounties. Fasting is also beneficial to the health and provides a break in the cycle of rigid habits and over indulgence.

People fast for spiritual reasons, and thus they get back spritual growth. It's more of a symbollic ceremony.
