How about a spicy dessert? Brownies sprinkled with cayenne pepper. I got this from the cooking channel...but tried it and liked it. Have since tried grapefruit slices with BBQ sauce...hey, don't knock it until you've tried it! Apple slices with hot sauce are also good. Something about sweet and spicy that is just really good if you like spicy foods. Also, try a recipe called Paprika Beef. It's like strips of steak marinated in a lot of paprika, very good!

The best quick fix is to get some spicy salsa and pour 2 tablespoons on to regular cornflakes or regular rice cripies or a combination of both, a few boiled / tinned garbanzos, a little boiled diced potato. Sprinkle on some finely chopped sweet onion (1 tbsp) and chopped coriander leaves (1tsbp). A delicious snack that will make your ears ring and your nose run.

I used this recipe while I lived in USA as we used to miss a well known indian snack called Bhel Puri. What i have described above is a very western version of the indian snack, but gives the same effect. Assemble the dish as he is about to eat it or as you know cornflakes goes soggy. It has to be crunchy. It is a low fat and healthy snack. Hope your husband likes it.

Fun appetizer!

Edna’s Armadillo Eggs

Mix together:
½ lb. Owens Hot Sausage
½ lb. shredded Monterey Jack cheese
1½ cups Bisquick
And enough water to be able to pat these into little pancakes.

Seed a whole pickled jalapeno pepper and place a small piece of monterey jack cheese inside the pepper. Place stuffed jalapeno on top of a little pancake and close pancake to seal, forming into the shape of an egg.

Brush eggs with an egg wash (1 egg beat with 1 Tbsp. water). Bake in a slow oven (about 325ºF) for 25-30 minutes. Serve warm or at room temperature.

Pasta Puttanesca

2 Tbsp. extra-virgin olive oil
4 to 6 cloves garlic, chopped
1 tin flat anchovy fillets, drained
½ tsp crushed red pepper flakes
20 oil-cured black olives, pitted and coarsely chopped
3 Tbsp. capers
1 (32-oz) can crushed tomatoes
1 (14.5-oz) can diced tomatoes, drained
A few grinds black pepper
1/4 cup flat leaf parsley, chopped
1 pound spaghetti, cooked to al dente
Crusty bread, for mopping
Grated Parmigiano Reggiano or Romano, for garnish

Heat a large skillet over medium heat and add oil, garlic, anchovies, and crushed pepper. Saute mixture until anchovies melt into oil and completely dissolve and garlic is tender, about 3 minutes: your kitchen never smelled so good! Add olives, capers, tomatoes, black pepper, and parsley. Bring sauce to a bubble, reduce heat, and simmer 8 to 10 minutes.

Toss sauce with cooked pasta. Pass bread and cheese at the table. Serve w/ salad of baby greens, simple dressed.

I make a buffalo chicken that is killer!

You take boneless, skinless chicken breast in marinade them in

1/2 c ketchup, 1 tsp garlic salt, 1 tsp worcester, as much Texas Pete hot sauce (the best) you want. Then bake them at 350 deg.

My hubby loves it! I serve it with spicy potato wedges and maybe a salad.

Make or buy Buffalo wings, but buy a can of Hot chipotle peppers in adobe sauce (Hispanic Food Section) and puree them. Then mix with the traditional cayane pepper sauce for the wings. It's a different taste but delicious. I also like to throw them on the grill for a few minutes. mmmmmmm.
Make sure you have some blue cheese and plenty of water or beer to go with it.

BBQed shrimp, Thai red curried shrimp, buffalo hot wings, jamaican patties with jamaican hot sauce. Just get the cayenne pepper out or a jar of jalapenos and go to town with em. Experiment. Pepper is great with anything. Down here in Cajun country we spice up everything with Cajun spices.
