Yes they will.
Why would you want to do this in the first place. If you are just wanting them to check and make sure that you aren't carrying anything you shouldn't be then you need to call the airline and ask what you can and can't take before leaving home. This will save you time versus asking to be checked by security.

I assume you mean hand-check as opposed to putting the luggage through the scanner.
Yes, they will do this.
Why do you want to do this?
If it's because of photographic film you could keep it in a clear plastic bag separate from your luggage, send the luggage through the scanner, and let the film be checked by hand.

At the air ports , checking of your baggage's , whether it is cabin luggage or booked luggage , is entirely at the discretion of the security personnel present at the spot.
Some times level of security alertness also matters.
And you as a passenger , has no option in any of the checking procedures

I don't think that they would generally, if you say that you have a sensitive piece of equipment that can't get x-rayed then they'll just ask you to take it out, but put the rest of the bag through.

Perhaps, but they might not. If there is something in your luggage that is senstive to x-ray you might better to remove that item. Have them hand check that item, and send the rest through the x-ray.
