Mine is mashed potatoes

*12 or so red potatoes with the skins left on
*Boil until you can easily pierce the potatoe with a fork
*Drain
*Add about 1/2 cube of butter
*4 Tbs. Sour Cream
*4 Tbs. Mayo
*2 Tbs. Parmasan Cheese
*Sprinkle with Garlic Salt or about 2 cloves of pressed garlic
*Enough milk to make it smooth

**Key to the creamiest mashed potatoes is to use a mixer. Enjoy!

I can't find my handwritten recipe, but this one is fairly close! I add more herbs and fresh mushrooms, too. My family DEMANDS this every year, as well as my apple-cherry pie. I will try to find that recipe, too!
PORK SAUSAGE AND APPLE DRESSING

1 1/2 lb. bread, cubed
1/2 c. onion, chopped
1/2 c. sliced celery
2 apples, chopped
1/2 lb. melted butter
1 tsp. salt
1/4 tsp. pepper
2 eggs
1 tsp. sage
1/2 lb. sausage
Garlic salt to taste

Fry sausage to crumbly stage. Add onions, celery, and seasonings. Cook until onions is almost done and then add apples. Cook for a few minutes. Combine all ingredients in a large bowl and mix well. If not moist enough add a little water or chicken stock. This makes enough dressing for a 15 pound turkey.

Mashed taters! I make mine with the skins on (I love Yukon Golds). I put butter and minced garlic on the stove while boiling the potatoes. After a little mashing, add a whole brick of cream cheese and the garlic butter. Then take the mixer to it. Ooooh, that sounds good for dinner tonight!

MICHIE's SWEET POTATO SOUFFLE:
3 lbs. sweet potatoes, peeled & cut into cubes
2 eggs
1/2 cup brown sugar - divided
1/2 cup butter - melted - divided
1 teaspoon salt
1 teaspoon ground cinnamon
up to 1/2 cup orange juice
1 cup chopped walnuts
large marshmallows
In a large saucepan over high heat, bring potatoes to boil, reduce heat; cover and simmer 15-20 minutes and drain. Beat potatoes until slightly smooth, beat in eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon. Starting with 1/4 cup orange juice, make mixture moist and fluffy. Spread in a 2-3 quart pan. Top with nuts. Sprinkle 1/4 cup brown sugar, then 1/4 cup melted butter. Place Marshmallows on top. Bake at 350 degrees for 25-30 minutes. Don't let marshmallows over cook.

SWEET POTATO CASSEROLE
(even those that don't normally like sweet potatoes ask me to make this one for the holidays)

3 cups mashed sweet potatoes
1 cup sugar
2 eggs
1 tsp vanilla
1/2 cup melted butter
mix with mixer and pour into buttered casserole dish

topping:
1 cup brown sugar
1/2 cup flour
1 cup chopped pecans
1/3 cup melted butter
mix with fork and crumble onto sweet potato mixture.

Bake at 350 degrees for 30 minutes.

BROCCOLI CASSEROLE

2 boxes frozen broccoli
3/4 cup mayonnaise
1 small onion chopped
1 cup shredded cheddar
1 can cream of broccoli or broccoli cheese (for cheesier casserole)
bread crumbs
I can't believe it's not butter spray

Cook broccoli and onions together until broccoli is tender and onions are translucent. Drain. Mix in mayonnaise, soup, and cheese. Top with bread crumbs. Spray entire top with butter spray. Bake at 350 degrees for 30 minutes or until bubbling.



Both of these are much requested items with my family and friends.

I've been thinking about that meal for weeks....I can't wait!

My favorite is sweet potato casserole, but I don't have the recipe in front of me.


It has sweet potatoes, brown sugar, cloves, peaches and I can't remember what all else.

Cornbread Dressing

2 cups cornbread, cooled and crumbled
2 cups biscuits, crumbled
1 large onion, sauted
2 stalks celery, sauted
2 cups chicken broth
2 cups cooked chicken, shredded
3 tbsp. sage or to taste
1/4 cup milk

Mix well. Bake for 45 minutes or until golden brown, at 400F.

Mine is the good old southern dressing! I love it plain or with mushroom,pecans,apples,cranberries,sausage or a mix of several. But you must have the giblet(I remove the giblets from my personal serving-yuck!)gravy, turkey and fresh cranberry sauce to make it perfect!
