I have both non stick & enamel pans that could do with a new surface, any ideas?

I don't think they can be recoated, but I remember some years back they had a replacement policy. Check with Le Creuset to see if it can be replaced.

I wouldn't recommend it, just throw them out and go buy new ones. I have found the best cook wear to be Rivera, it's expensive, but I have had mine for at least 18 years and never had to replace a single piece, I do alot of cooking as well.
