Polysorbate 80 (commercially also known as Tween 80) is a nonionic detergent and emulsifier derived from sorbitol which is often used in foods, especially pickles. Polysorbate 80 is a viscous water soluble yellowy liquid.
Polysorbate 80 is often used in ice cream to prevent milk proteins from completely coating the fat droplets.

Polysorbate 80 - polyoxyethylene sorbitan monooleate, (x)-sorbitan mono-9-octadecenoate poly(oxy-1,2-ethanediyl)
Polysorbate 80 is made from Sorbitol, also known as glucitol, is a sugar alcohol the body metabolises slowly. It is obtained by hydrogenation of glucose changing the aldehyde group to an additional hydroxyl group hence the name sugar alcohol.
Hydrogenation is a class of chemical reactions in which the net result is an addition of hydrogen (H2). The usual targets of hydrogenation are unsaturated organic compounds, such as alkenes, alkynes, ketones, nitriles, and imine. Most hydrogenations involve the direct addition of diatomic hydrogen under pressure in the presence of catalysts. Some hydrogenations involve the indirect addition of hydrogen, these are called transfer hydrogenations.
To put all that into English... Polysorbated is a type of plastic that is not easily digested. If you were to ask most people they would say that its not bad for you, but then again, that is what Eve told Adam, and look where we are now. Makes me want to go find some fresh fruit... Sans Polysorbate 80 :)

Polysorbate 80 (commercially also known as Tween 80)[1] is a nonionic detergent and emulsifier derived from sorbitol which is often used in foods, especially pickles. Polysorbate 80 is a viscous water soluble yellowy liquid. The hydrophilic groups in this compound are polyethers which are polymers of ethylene oxide.

Polysorbate 80 is often used in ice cream to prevent milk proteins from completely coating the fat droplets. This allows them to join together in chains and nets, to hold air in the mixture, and provide a firmer texture, holding its shape as the ice cream melts.
