Put it in water - if its sinks its fresh, if it floats its off.
(its to do with the gas that builds up inside)

Smell the shell, if it stinks, its not good. Crack the egg into a dish and if the yolk stands up and no water in with the whites then it probably is a fresh egg.
Most eggs in the grocery store are already 2 weeks old when a store recieves them. Egg cartons don't seem to be dated the day the eggs are layed/collected, but rather on the day the eggs are shipped.
Fresh Eggs(as in the ones I fetch from the henhouse), can stay good for up to a month if kept in a cool place.

Eggs are safe to sell up to 28 days after laying. And you can confidently say they have another week shelf life after that.
The floating egg theory may work but whats the point ? Just crack it open, if the smell doesn't knock you sideways its OK to eat. Eggs float because of the size of the air sack inside, you can see this through the shell using the correct lighting. It doesn't mean the egg is off.
You should never eat RAW unmarked eggs so please ensure its cooked fully.
Egg whites get more watery as the egg gets older. Thats why supermarket eggs are all rubbish compared to eggs direct from a farm. They are often 3 weeks old by the tiem they reach the supermarket.

The egg package has a date on it but I often go past that date. Open the egg. If it has any type of smell it is no longer fresh. If the yolk and white part are thick and it stands up it is fresh. If the white is like water it is not fresh.

-You can use the "crack test" which you crack the egg on a plate, if the egg white is too liquidy its not fresh. you can tell how old the eggs are depending on how liquified the egg white is.
- You can also crack and smell the egg, if it smells awful then, obviously its not fresh.
-You can also put the egg in a bowl of water, if it sinks its still fresh, if it floats its not fresh. If the egg stands on the tip of the egg shell it could be about almost about 2 weeks old..if it sinks completely its very fresh.

Fresh egg sinks to the bottom of a glass of water. Stale egg will float.

You can crack the egg. The fresher it is the more plump the white of the egg is around the crock. If it spreads it is old.
If you don't want to crack the egg then put it is a glass of water, the nearer it floats to the top the older it is.

If the egg carton does not have a date, put a date on it the day you buy it. They are good for a couple of weeks if kept refrigerated.
