Crispy Rice Treats
INGREDIENTS:
4 cups crispy brown rice cereal
1 cup brown rice syrup
2/3 cup peanut butter (or try almond, cashew, even hazelnut)
healthy dash of umeboshi vinegar
healthy dash of vanilla
optional: cinnamon, nutmeg, raisins, roasted almonds, peanuts or cashews
PREPARATION:
1. Over medium flame, heat up brown rice syrup and peanut butter, vinegar and vanilla, stirring constantly until the mixture is smooth, thinned out and bubbling a little.
2. Pour onto crispy rice cereal in a large bowl and blend well with a wooden spoon.
3. Pour into a pyrex dish (or other pan) and flatten with a wet spatula.
4. Let cool. Slice and serve.
Serves 8
Healthier Cookies For Kids
Ingredients:
1 large banana
1/2 cup light butter
3/4 cup brown sugar
1 cup of oatmeal
1/2 cup white flour
3/4 cup wholewheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1/2 cup macadamia nuts
1 apple
Directions:
Mash banana and mix with butter and brown sugar. In separate bowl mix dry ingredients and then mix them together. Add the nuts and apples last.
Spoon onto greased cookie sheet and bake in oven at 325 degrees for 20 minutes or until golden brown. A wonderful afternoon snack served with a glass of milk or juice.
Peanut Butter and Jelly Muffins Recipe
2-1/2 C. flour
3/4 C. sugar
1 1/2 T. baking powder
1 t. salt
2/3 C. crunchy peanut butter
3/4 C. milk
1/3 C. vegetable oil
2 eggs
1 jar strawberry or grape jelly (10 oz.)
non-stick cooking spray
Spray 12 muffin cups with non-stick cooking spray.
In a large mixing bowl, mix together flour, sugar, baking powder, and salt. Using a pastry blender or two knives, cut the peanut butter into the flour until the mixture resembles coarse crumbs. Add milk,, vegetable oil, and eggs; stir until just moistened.
Spoon muffin cups 1/2 full with batter. Create a well in the center of each cup. Place about 1 1/2 tablespoon of jam into each well. Spoon remaining batter over jelly.
Bake at 400° F. for 20 to 25 minutes, or until a wooden pick inserted in the center comes out clean. Cool on a wire rack.
Worms in Dirt
1 package Oreo cookies
4 tablespoons stick margarine
1 - 8 oz. package cream cheese
1 - 12-oz. Cool Whip
2 small packages instant vanilla pudding
3-1/2 cups milk
Melt margarine and mix with Oreos. Save 1 cup for topping. Press remaining mixture into pan for crust. Cream cheese and gradually add milk.
Add pudding and blend well. Blend in Cool Whip by hand. Pour into crust, sprinkle reserved Oreos on top and refrigerate.
Line small flower pots with foil (I JUST USE MUFFIN TINS LINED WITH PAPER) and putting enough for one serving in them and place a gummy worm on top.
Banana Wrap
8 inch flour tortilla
2 - 3 tablespoons peanut butter
2 - 3 jam or jelly
1 small banana, peeled
Place tortilla on a paper towel, microwave on high for 10 to 20 seconds until tortilla is soft and warm. Spread with peanut butter, then top with jelly or jam. Place banana near the right edge of the tortilla. Fold up the bottom 1/4 of tortilla. Bring right edge over the banana and roll up.
Homemade Animal Crackers
1/2 cup oatmeal
2 tsp honey
1/4 to 1/8 tsp salt
3/4 cup flour
1/4 tsp baking soda
1/4 cup butter, softened
4 Tbsp buttermilk
Do not grease cookie sheet. Grind oatmeal in a blender until fine. Add honey, salt, flour and soda. Cut in butter. Add buttermilk.
Roll dough very thin; cut out with animal cookie cutters. Bake at 400 degrees (F) until brown, 10 to 12 minutes.

pinch paprika
50g/2oz cooked frozen or canned sweetcorn
40g/1½oz cucumber, red pepper or celery, sliced thinly
shredded iceberg lettuce
2 mini tortillas
2 chives (optional)
Method
1. Drain the tuna and mix together with the mayonnaise, lemon juice and paprika.
2. Stir in the sweetcorn and cucumber, red pepper or celery.
3. Divide the filling between the tortillas, placing it to one side of the centre. Wrap the unfilled half around the filling and tuck in one end to secure. Alternatively secure the tortilla by tying a chive around it.

Pizza Sticks
1 (11 ounce) package refrigerated bread sticks
Pepperoni, pre-sliced
Shredded mozzarella cheese
1 tablespoon parmesan cheese
1 tablespoon Italian seasoning
1 garlic powder
Pizza sauce
Heat oven to 350 degrees F.
Roll out bread sticks on an ungreased cookie sheet. Lay two pepperoni slices on the end and sprinkle with some mozzarella cheese. Fold bread stick over and twist.
Mix together parmesan, Italian seasoning, garlic powder and sprinkle over top of twisted bread stick. Add more mozzarella if desired and bake for 5-8 minutes or golden brown.
Dip in warmed pizza sauce to eat.
Chicken Nuggets
1 egg
2 tablespoons milk
3 cups cornflakes, finely crushed
1 pound boneless chicken breast, cut into 1-inch pieces
Cooking spray
Heat oven to 400 degrees F.
Whisk eggs and milk together in a small bowl; set aside.
Place cornflake crumbs in a gallon-size zip-top bag. Dip each chicken piece in the egg and milk mixture, then shake the pieces in the cornflake crumbs bag.
Place each coated nugget on a cookie sheet coated with cooking spray.
Bake for 15 minutes or until done.
Serve with your favorite dipping sauce.
Makes 6 servings.
Turkey Pockets
Pillsbury crescent rolls
1 1/2 - 2 cups cooked turkey, chopped
American cheese
Place one crescent roll on cookie sheet, then flatten. Put chopped turkey and 1/2 slice of American cheese in the center. Cover with another flattened crescent roll and seal sides with finger or fork.
Bake at 350 degrees F until golden brown, about 15 minutes.
Dogs in a Sweater
1 (11 ounce) package refrigerated breadstick dough
8 hot dogs
8 Popsicle sticks
Catsup, mustard and/or ranch dressing
Separate dough; roll each piece into a 15-inch rope. Insert sticks into hot dogs lengthwise. Starting at one end, wrap dough in a spiral around hot dog; pinch ends to seal. Place 1 inch apart on a baking sheet that has been coated with nonstick cooking spray. Bake at 350 degrees F for 18 to 20 minutes. Serve with toppings of your choice.

This is my daughter's favorite, "Tortilla Pizza::
I get two small flour tortillas. I spread a little bit of pizza sauce on one of them, then sprinkle cheese on top of the sauce, then put the other tortilla on top. I cut it into wedges for her. She loves it and usually eats most if not all of it. Plus you can get that Pizza Squeeze stuff, it's sauce in a ketchup type bottle and you can just use what you want and then put the rest in the fridge, it's much easier to deal with than a can of pizza sauce.

One thing my son enjoys is "Sushi" for lunch. I take a whole grain tortilla, spread it with light cream cheese and put in a few slices of lean turkey breast. Roll it up, and slice into "sushi" like bites. I throw a pair of chop stinks in his lunch box. Fun, quick and delicious!

A friend of mine puts ham slices with chunks of Cheddar cheese together and rolls them up and freezes them, then puts 3-4 in the lunch. I think anything w/fruit or a small veggie plate w/yogurt dip is good and fun.

I have a wide mouthed Thermos that I use for my kids. They even make one that you fill, microwave, cap and pack. I pack them leftovers or canned pastas or soups.
My daughter likes salads with ham or turkey on top... son likes string cheese wrapped with slice of turkey breast and package of wheat thins, throw in a piece of fruit and a drink and he's done.
Consider getting snack sized baggies and prepacking little bags of baby carrots, celery sticks, seedless grapes, whole wheat crackers, lowfat cheese cubes etc ahead of time so they're quick to grab and pack in the a.m.
Roll-ups are fun... take a whole wheat tortilla and spread it with peanut butter and jelly, roll it up. Ditto with spreading lowfat mayo, mustard, ranch or lowfat cream cheese... then roll it up with turkey breast, ham slices, roast beef, spinach or lettuce leaves, etc... be creative and make whatever roll-ups suit their likes/dislikes. I've rolled sandwich slices of dill pickle up in there and thin sliced cucumbers, tomatoes, whatever...

Candy Sushi
4 large marshmallows or 1 cup mini-marshmallows
1 tablespoon unsalted butter
1/2 cup rice cereal
2 cherry or strawberry licorice twists, such as Twizzlers or Red Vines
2 fruit roll-ups, any flavor
In a small saucepan, melt marshmallows with the butter over low heat. Add the rice cereal and stir to coat; let cool slightly.
Cut licorice to the length of the fruit roll-up. Unroll the fruit roll-up and peel off the plastic film. Place half of the rice cereal mixture on the edge of each roll-up. Place the twist in the center of the rice mixture and roll up the candy sushi. Dip a knife in water to keep it from sticking and cut into 2-inch pieces

Peanut Butter Sesame Noodles
2 teaspoons smooth peanut butter
1 tablespoon honey
2 tablespoons tamari (dark soy sauce), eyeball it
1 teaspoon sesame oil (eyeball it)
1 teaspoon ground ginger or 1 inch of fresh ginger, peeled and grated
1/4 pound spaghetti, cooked and rinsed under cold water
1 tablespoon light sesame seeds, toasted over medium-low heat for 3 minutes (optional)
In a medium microwaveable bowl, heat the peanut butter in the microwave oven until melted, about 15-20 seconds (or heat peanut butter over low heat on stove until mushy). Whisk honey and tamari into the peanut butter, then whisk in the sesame oil and the ginger.
Toss the spaghetti with the sauce, and top with the sesame seeds, if you want to go really groovy with the noodles. If you want to bump up the crunch factor, add some shredded carrots, scallions, bean sprouts or other veggies.
Yields 1 serving

“Was-sup” Tuna Salad Pinwheels
1/4 teaspoon wasabi paste, a blob the size of a pea
1 tablespoon tamari (dark soy sauce), eyeball it
1 tablespoon vegetable oil
2 scallions, chopped
1 6-ounce can water-packed tuna, drained and flaked with a fork
1 large (10-inch) flour tortilla
1 cup your favorite greens
In a small bowl, mix a small amount of wasabi with the tamari and the oil.
Add the scallions and tuna, and mash with a fork to combine. Heat a large skillet over high heat and blister the tortilla for about 30 seconds on each side to soften and toast. Transfer the tortilla to the countertop and let cool for about 1 minute. Top the tortilla with an even layer of the greens and then the tuna salad.
Fold 2 sides of the tortilla over the tuna and tightly roll up the tortilla to enclose the salad. Cut into 1-inch-thick slices to make the pinwheels.

Chicken Lettuce Wraps w/Creamy Caesar Dressing
2 hearts of romaine lettuce
1 rotisserie chicken
1 tomato, diced
1 medium cucumber, diced
2 tablespoons parsley, chopped
1 tablespoon brown mustard
1 clove garlic, crushed
1 lemon, zested and juiced
2 tablespoons anchovy paste (optional, but it tastes better with it in)
½ cup grated Parmigiano Reggiano (a few handfuls)
2 teaspoon Worcestershire sauce (eyeball it)
1 teaspoon freshly ground pepper (eyeball it)
3 tablespoons extra-virgin olive oil (EVOO)
Cut bottoms off the romaine and cut the heads in half lengthwise. Separate and wash the leaves. Let them dry in the dish rack while you prepare the rest of the menu.
Cut the breast meat off the chicken, and then cut the legs and thighs off using kitchen scissors. Slice the chicken up on an angle and mix it with the diced tomatoes, cucumber and parsley, and arrange on a plate.
Make the dressing: Put mustard, garlic, lemon zest and juice, anchovy paste (if using), cheese, Worcestershire and pepper into a blender. While blending, drizzle EVOO through center of the lid in an even stream. When oil is combined, remove dressing with a spatula to a bowl.
To assemble, mix the chicken salad with the dressing and fill each lettuce leaf with some of the chicken salad. Fold lettuce up around meat, like a lettuce taco or use the lettuce as a utensil to scoop up the chicken salad.
Yields 4 servings

For drinks my mom would fill up a water bottle with juice, kool-aid, or water a little less than half way and freeze it over-night. In the morning she would top it off and put in in my lunchbox. My drink was perfectly cool and the "Ice" was melted by lunch. Plus it gives you more than two sips from a juice box.
