Ginger Red Curry with Kangaroo

Degree of difficulty: Low

Cooking Time: 10 minutes

You need:
500 gm kangaroo fillet (cut into strips)
1 tsp of fresh ginger (grated or finely diced)
1 tsp of fresh garlic (pressed or finely diced)
2-3 tbsp of red curry paste
1 tbsp of fish sauce
1 tbsp of lime juice
1 tbsp of brown sugar
1 can of coconut milk or cream
1 small can of pineapple pieces
1 handful of cherry tomatoes
1 handfull of fresh basil

Method:
Stir fry the garlic, ginger and red curry paste for two minutes.
Add the kangaroo and continue to stir fry for a further two to three minutes.
Add the coconut milk/cream and stir fry for another two minutes.
Add the fish sauce, lime juice, brown sugar and pineapple.
Finally add the tomatoe and chopped basil and season with salt to taste.

Here's a hint:
Marinate the kangaroo fillets or saddles in equal amounts of soy sauce and worcestershire sauce and then freeze.
