Some bananas - and not just plantains - do not turn yellow when they ripen. When over-ripe they turn black. Typically they are thinner than plantains and perfectly safe to eat.

Hi, yes some bananas will simply stay green and then just go off. They are fine to eat, but may not taste too good. Do you know what the best thing to do with green bananas is? You're going to think I sound mad, chop it in half then slice it long ways, fry it and eat with fried dumplings, or with beans and egg and breakfast stuff! It's delicious and saves wasting bananas! X

If you're worried about blood sugar spikes or doing GI diet, it's better to eat bananas slightly green as there's less sugar in them and it's released more steadily into the bloodstream.

If you have a plain green banana you should just let it sleep next to an orange for a night... Next morning you've got one who's yellow (or maybe a bit brown)!

are you sure you don't have plantains? they look just like a banana, but are starchy instead of sweet, and always look green.
bananas, on the other hand turn from green to yellow, then brown spotty, etc.
plantains, if that is what you have, need to be cooked to be tasty, changes the starch into sugar, best way is pan-frying.
