INGREDIENTS:
* 1 cup all-purpose flour
* 2/3 cup whole wheat flour
* 1/4 teaspoon salt
* 2 1/2 teaspoons baking powder
* 2 tablespoons white sugar
* 1 1/2 cups buttermilk
* 2 small ripe bananas, finely chopped
DIRECTIONS:
1. In a large bowl, mix all-purpose flour, whole wheat flour, salt, baking powder and sugar. Stir in buttermilk and bananas just until moistened.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Whole Wheat Banana Pancakes-Serves 2(5 or 6 med-large pancakes)
1 cup whole wheat flower
1.5 tbsp Brown sugar
1 tsp baking soda(or powder, it doesn't really matter)
1/4 tsp salt(optional, i don't even use it)
Combine these dry ingerdients in a bowl, mix well, and then add:
1 cup milk
1 tbsp melted butter
1 large egg
Then, you will need at least one and a half RIPE bananas. Chop some up, kinda mash it a little bit, and add it to the mix. Leave enough un-chopped so you can add slices later. Pour the batter onto an already hot pan, and quickly add some sliced bananas to it. Cooking time on each side depends on the pan and the stove, so be prepared to experiment. I like mine not cooked all the way through. Also, you may need to re-grease(I like to re-butter) your pan frequently.I reduced/modified this recipe from one that I found on slashfood.com
