I assume you are talking about day-hiking as opposed to overnight backpacking.

There is a list of items found in many outdoor books and websites called 'The 10 Essentials'. Ironically, the list is not completely standardized and there is usually a bit of variation between the exact items depending on location and priority.

Here are my '10 Essentials' that I take while day-hiking. See links below for other variations.

1-Water and water purification tablets. Make sure you have enough for the time, distance, and temperatures
2-Food. Salty snacks and lots of carbs is a good choice.
3-Flashlight or headlamp.
4-Space blanket. A plastic sheet that folds down to the size of deck of cards and is coated with a silver-looking coating that reflects heat. Used for warmth if you get stuck overnight, tarp for protection against rain and also for signaling. Usually costs $3-4 at most outdoor stores.
5-Pocket knife or multi-purpose tool
6-Extra clothes as needed for area (I usually have a compact rain jacket)
7-Map and Compass (and know how to use it)
8-waterproof strike-anywhere matches (or other firestarter)
9-First aid kit (including bandages, blister care, aspirin, anticeptic)
10-Sunscreen and sunglasses

Flashlight! Because of my own experience last year. When I climbed the 2 km almost 90degrees mountain at 5PM, our guide told me that he would leave our group at 6PM because he left his flashlight in the motorboat! And we were just almost halfway then. So, I simply told him, there's no need for us to wait and I handed over to him my flashlight :)

Depends if you are sleeping over..... If not good walking shoes, two pairs of socks, water and something to eat. If you are sleeping over, water bottle, bug repellent, warm jacket, matches.
