One, move out. Two, find a new home for these animals, even if it is the shelter. Most of them are non kill shelters anymore. Three, play like you don't know anything. years ago, when I was little, there was a young couple living next door, and they had this little white dog. I remember my mother being outraged because they were abusing this poor dog. Finally, she could not take it anymore when she heard a bunch of yelling and crashing coming from this house. In the middle of the night, she went over there and stole that dog, and took it to the shelter. They ended up having to euthanize it because they had beaten the poor thing so severly with a broom handle that they had broken it's back. I hope that those people rot, and if you stand by and do nothing for fear of your uncle, that you are just as guilty as he is. BTW, most cops are sympathetic to animal abuse cases, so they should understand. However, make sure that you document EVERYTHING!!!! (obviously, the easy way out here is to either be anonymous or give another name)

Very simple (MUAY OUT). Find another place to live. It will prevent anyone from getting hurt and/or going to jail.
You are young. You don't need to live with the fact you crippled or killed your uncle. Your mother doesn't need to live with that either.
You run the risk of having a criminal record that will screw up every chance you get for a righteous job.
So, what could happen? nothing good, and possible ruin your life forever.
Life's too short dude. If you want to put your life on the line, do it with honor -- join the police dept or the military. This way, if you die, your heartbroken mother can at least be PROUD of you.

If he hits you then you are allowed to defend yourself. However it comes to court then it will be your word against his, unless you have witnesses. So try to keep friends around in case he starts something so they can back up your side of the story. If he's abusing animals though then he needs to be reported. Is there a way you can get the animal(s) out of the house? I think you should move out too, you are old enough for your own place or to share rent with some other people around your age. Good Luck.

Mostly at the discretion of the responding officer. If neither one of you wants to press charges, and it appears each of you equally engaged in the fight, some states have mutual combat law. The law provides that if each party refuses to press charges on the other, the "fight" or "combat" could be a wash.
This is common in rural areas. Urban area law enforcement are more apt to arrest you both with a charge of disturbing the peace, even if both of you refuse to press charges on each other.
The other senario being that one of you appears to of had the "upper hand" in the fight. If one of you has visible marks (victim), from the others fury, and the other has no visible marks of a fight (assailant), police could arrest the assailant even if the the victim refuses to press charges.
Lots of variables and hypotheticals to consider in this situation.

Get a criminal specialist, yet what grounds? I advise truly, what did the Band do or fail to attempt this can likely impact a stabbing? that's a hell of a stretch till there is a few thing else to the tale you have not shared....i will't likely imagine.... once you sue some one it truly is because you're claiming they are to blame for damages incurred. you want to educate some form of responsibility.

Don't hit him. If he attacks you then you defend yourself.
But what about the animal? He can't defend himself. Depending on the degree of abuse, would it make the matter worse for the animal? In many situations they don't remove the animal right away.

make sure he hits you first and make sure you don't attack him when he's down- you have to give the cops every reason to believe you didn't go any further than you had to.
